Hey I noticed before you left the grasslands that you checked in with Chadley's available combats, but in the 'Develop Materia' menu you can buy Materia using the points you already have. Make sure you buy those, bc you can't buy them from other regions. Only the Materia for that region will show in Chadley's store.

its very easy to travel back to previous regions in this game so no need to 100% a region each time

Fun fact, the original name for the Midgardsormr was the Midgar Zolom. Many boss names got changed and I don't know why. The new name sounds silly to me. Also, your reaction to Red's move-set was great.
