Considering the fact that the surface he is cooking them on is round, it's not difficult. When he flips them, he tucks the excess batter and topping underneath so that they fill the round indentations of the cooking surface.
I miss Kobe. I used to live in Kyoto for a year and Shiga for 6. I love takoyaki. My family still makes it in British Columbia. This looks very very delicious.
