If you prefer not to use fish sauce, you can make vegetable broth instead. To prepare vegetable broth, add kelp, mushrooms, radish, green onions, onions, and cabbage to a pot of water. Bring it to a boil, then let it simmer until the flavors are well extracted. Afterward, strain out the vegetables, and season the broth with salt to taste.😊

Excellent questions! I used all-purpose flour. You can take out one side of white kimchi and cut it. If you have leftover white kimchi, you can put them in a small container and put it in the refrigerator to eat next time. You can keep kimchi for a long time, but I think it's good to eat white kimchi within a month or two. Hope these answer your questions! Thank you so much!

I love white kimchi, but I'm not meant to have sugar or flour. Can this be made without those things? Actually I'm also not meant to have anything sweet. But am welling to use the pear. Any advice would be very appreciated. Thank you.

The reason for adding flour paste when making kimchi is because the flour paste serves as the important ingredient for kimchi fermentation, acting as food for lactic acid bacteria. You can also use ground glutinous rice flour or blended rice instead of the flour paste. If you don't like sugar, you can grind a pear and add more pear juice to give it sweetness. @@chungskfood Thank you for your reply. Actually I'm on a very low carb diet so no rice either, maybe I'll try a very small amount of rice or flour, since it's food for the bacteria it will hopefully eat most of those carbs. I will check my blood sugars and see what happens. Thank you so much.

Kimchi is a fermented food and tends to have a slightly salty taste. Kimchi made with red pepper powder usually has more of a salty flavor than a sweet one. The kimchi shown in this video is not particularly sweet nor too salty. It's important to note that Koreans typically don't eat kimchi alone; it's consumed as a side dish along with rice. This a very good question! I put it for a half or a day at room temperature and then put the kimchi in the refrigerator. If you do this, you can have it within a day. But the best fermenting period will be taken around 2 to 3 weeks in the refrigerator. Hope this answers to your question💕💕

You really should use a scale and keep salt at 2% or a little more. this looks really heavy on salt.
