I'm Italian and we always mixed the ricotta cheese into the ziti so all of the pasta gets coated added the grated cheese with some fresh parsley salt and pepper and a pinch of ground nutmeg. In pan layer sauce ( which I and lots of Italians call gravy) coated ziti more grated cheese , lots of shredded mozzarella ,sauce and repeat . Yummo

@@Mexicobeanpole yesss, a tiny pinch is used in many savory dishes. Research nutmeg and lasagna and you will see that it is used by many . I come from many family members born in Italy and this is common there. Don't knock until you try it. Just a pinch. Don't forget when mixing the ricotta with salt and pepper and real good grated Italian cheese like pecorino romano or reggiano and chopped parsley there is barely a hint of the nutmeg. So whether I'm making lasagna or baked macaroni my homemade manicotti even spaghetti with ricotta and egg, or a savory dish with a bechamel sauce a pinch of nutmeg makes all the difference. 🙂

@@Mexicobeanpole “Chef Boyardee”, what a rude thing to say. My mother, from Rome, always put just a dash of fresh nutmeg in her ricotta cheese mixture for lasagna. Nutmeg enhances the taste of the ricotta. Nutmeg is also used in béchamel sauced lasagnas, in Northen Italy.

Hi, My husband absolutely loves Mexican food (the real stuff) and I would love to make him some. I love it too, but he’s absolutely nuts for it. We find the flavours and the aromas are so nice. And I would love to try to make some it for him for his birthday. Could you suggest a recipe or two of something that I could possibly try to cook? I’ve googled a ton but I find that by asking people instead of Google I get the authentic recipes and not the Americanized versions of them. Or if you know the name a good KZbin channel that makes traditional Mexican food that would be great as well. I’m in Canada and we don’t have many people here from Mexico so I don’t really have anyone to ask. So if you know of a good website or KZbin channel that you could recommend I’d really appreciate it. Today someone cleared out the freezer of things about to expire and brought them to me and my mom. Lots of died TV dinners. But I found one baked ziti family size dinner. I ran out of cheese for frilled cheeses. I'm so blessed. I have a fifth of the dish left... large breakfast. Keep up the good cooking. I'll be watch to eat vicariously with you soon.

I made this last night, but without the onions and garlic due to husband’s aversion to them (although the jarred pasta sauce I used had some in it). I also fully mixed the ricotta into the pasta, as some of the Italian commenters here suggested. Anyway, it was a huge hit and so very tasty!! Hello from the rock of Gibraltar. If you place a damp kitchen paper/towel besides your chopping board as you chop onions it helps with crying. Onion acid is attracted to moisture (hence your eyes) so this hack really minimises the itching.! Love your channel. 🥰🥰😘

Pretty close to my momma’s recipe. She made her own sauce. Of course I still do. Not fond of skin and seeds from tomatoes so we use purée. The sauce simmers minimum 3 hours. Then we assemble the ziti. Sometimes as an alternative to sausage, my grandma would fry up some sliced eggplant as an added layer. Great for a lighter dish. Nice job. Very authentic. @@youdontknow7853 i just made it, its good 😁😁 Next time I'll add a little more Italian seasoning, and I'll cover it in the oven for the 1st 20 minutes, then uncover the last 10 minutes, ill also cook it on the bottom shelf instead of the top, I just don't prefer the brown top. But other than that it's an amazing recipe. Another thing is I will wither mix in the ricotta completely next time, or use smaller dollops. Overall great recipe 👍

I love recipes like this because you really can do it with nothing written down to follow. Anybody who does any cooking instinctively knows what the basics are in this recipe and you just customize it to your taste. I like adding chopped green pepper and sliced black olives. I usually use both sausage AND beef. If I have basil growing in my garden I would definitely pull a bunch from my garden and chop it, then layer a few whole leaves on top with the cheese. I am not into a heavy garlic taste so I tend to go light on the garlic. I might also add mushrooms and sauté them with my onions and peppers. I have never used pepper flakes, but I've seen lots of KZbin cooks use them and I'm inspired to get some and start trying it! Thanks for the inspiration!

This is probably my third or fourth time back to watch this video. I made your ziti after watching your video for the first time and it was a hit with the fam! It also gave me confidence in cooking which has never been my strong suit. So I’m back for the fourth time tonight, just to go over the layering process cause I always forget which comes first. I really love your recipes! I recommend Preppy Kitchen to everybody who asks me if I know of a recipe for something! I just made this tonight for dinner but had to improvise on a few things because it’s what I had on hand. I used ground turkey, cream cheese, Colby jack cheese and grated Parmesan instead of ground sausage, ricotta, mozzarella and fresh Parmesan. I also did 2 15oz cans of tomato sauce, a 6oz can of tomato paste and a 28oz can of diced tomatoes, because that’s what I had on hand as well. It is still amazing with my change ups, although when I have the money I would like to get the necessary items to make this again 😁😋😋!!

One of my friends from Wizards of Waverly Place, Max, is bringing a baked ziti casserole to the picnic at Schenley Park on June 5. The episode Dude Looks Like Shakira will most likely be referenced that day. He and Justin used to grill hot dogs and hamburgers, but they decided not to do that again this year since it was a lot of work!

Oh my gosh, made this today and it was delicious! It was a big hit with everyone! I made the sauce the day before, then assembled it. I was concerned about the pasta absorbing the liquid and becoming dry if I fully assembled it the day before our dinner. For dessert I made your pumpkin cake. Such a great dinner! Thanks, John!

This brings back wonderful memories. We hosted the highschool Varsity football pasta dinners the night before the games. I made baked ziti (no ricotta) with lots of mozzarella and it was a hit. Both the players and coaches loved our pasta feeds the best. 15 pounds of sausage and ground beef, 10 lbs of ziti, 4 pounds of mozzarella and viola! 3 huge trays of heaven. Most parents made Spaghetti with Ragu but we love good food and were blessed with a budget to do more

Quick tip, if you're not into the sometimes grainy texture of ricotta, you can sub large curd cottage cheese mixed with one egg. Texture is great, and it absorbes all the favors of the dish.

My Italian grandmother always mixed her ricotta cheese with her sauce…to this day…I can’t eat ricotta cheese unless it’s mixed with sauce lol…also..she mixed all the cheeses with the ziti first…then she added her sauce…toppings it with a mixture of bread crumbs mixed with cheese and mozzarella…it was so good…I’m making it for Christmas dinner tomorrow…Merry Christmas to you and your family John…May Peace and God follow you into the new year♥️💚♥️💚♥️💚🎅🏼🤶🎅🏼🤶🎁🎄🎁🎄ps…she added butter to the breadcrumb mixture to give it a shell kind of…try it out
