In this video, I'll show you how to make a low-calorie berry-coconut cheesecake based on coconut cream. Free of lactose, gluten and sugar.
INGREDIENTS (for a 16 cm cheesecake)
Biscuit:
- Protein 2 pcs.
- Coconut shavings 40 g.
- Rice flour 20 g.
- Sweetener 1 g (10 times sweeter than sugar)
- Vanillin (optional)
- Baking powder 3 gr.
- pinch of salt
coconut layer:
- Coconut cream 400 ml.
- Gelatin 10 g.
- Water 100 ml.
- Sweetener 3 g (10 times sweeter than sugar)
- Vanillin (optional)
Berry layer:
- Raspberry 100 gr.
- Gelatin 5 gr.
- Water 50 ml.
- Sweetener 1 g (10 times sweeter than sugar)
🌡 Bake at 180°C (356°F) for 15-20 minutes until golden brown.
