Cake (cookies):
- Almond flour 60 g.
- 2 eggs (egg white 70g. yolk 40)
- A pinch of citric acid
- Erythritol 50g.
- Leavening agent 10g.
- A pinch of salt
- Vanillin
Cream:
- Ricotta 250 g (or "Mascarpone")
- Cream 30-35% of fat - 250 ml.
- Sweetener 8g (5 times sweeter than sugar) or 30g erythritol
- Vanillin
Strong coffee ~120 ml. (brew with extra charge)
Weight ~ 860g. Diameter 16 cm.
Bake at 170°C (338°F) for 25 minutes. Then turn down to 100°C (212°F) and leave in the oven for another 10 minutes.
