Sweet Potato Bread
For 6 pieces (Ingredients)
200g bread flour
1 teaspoon (3g) instant dry yeast
2 tablespoons (20g) sugar
1/2 teaspoon (3g) salt
100g milk
40g boiling water
10 g unsalted butter
(1/4 egg (for glazing)
240g boiled sweet potato
6 tablespoons (60g) sugar
3g butter x 6
(Summary of preparation)
Put ingredients in a container and mix for 2 minutes
First fermentation until doubled in size
Pour the caramelized sugar over the sweet potatoes.
Cut the dough into 6 equal pieces.
Roll out the dough and let it rest for 5 minutes.
Roll out the dough flat and brush with egg wash.
Put the sweet potatoes in the center of the dough and let it rise for a second time.
Spread butter on top of the dough.
Bake in a preheated oven at 200°C for 12 to 15 minutes
