This is a delicious banana stew recipe.
A perfects carbohydrate option.
You can cook bananas in various ways, this is one of my favorite options.
You can use less bananas for a smaller portion.
Ingredients :
14 Green Bananas
5-7 Cloves of Garlic
2-3 Tomatoes
1 White Onion
3 Tbs of Olive Oil
1 Tbs Tomato Paste
1 vegetable cube
300 ml of Water
Method:
- Put some oil on your hands to prevent the bananas from being sticky while peeling
- Peel the bananas, then wash them and soak in water
- Cut the bananas into bite sized chunks and set them aside
- Peel, wash, crush and slice 5-7 cloves of garlic
- Wash and slice 3 tomatoes
- Peel, wash and slice an onion
- Saute the onions in 3 tbs of Olive Oil, then add the garlic and sauté until brown
- Add Masala Mixed Spices and keep stirring
- Add the diced tomatoes and then 1 tbs of Tomato paste
- Add 1 vegetable cube block
- Add the bananas, keep stirring and then add 300 ml water
- Cover the bananas and simmer to cook for between 20-25 minutes !
- Serve hot with your choice of vegan protein and vegetables
- Enjoy !
