Ingredients for Blackberry Lemon Cake:
►5 large eggs, room temp
►3/4 cup granulated sugar
►3/4 cup all-purpose flour
►1/2 tsp baking powder
For the Lemon Syrup:
►1/4 cup warm water
►1 Tbsp granulated sugar
►3-4 Tbsp fresh lemon juice (from 1 medium lemon)
For the Blackberry Frosting:
►8 oz cream cheese, softened
►8 Tbsp (113 grams) unsalted butter, softened
►1 cup powdered sugar
►6 oz blackberries (reserving 6 berries for garnish), coarsely chopped
Optional Garnish:
►3/4 cup heavy whipping cream, chilled
►1 Tbsp powdered sugar
►6 blackberries (taken out of your 6 oz package)
►2 lemon slices, cut into triangles

Oh, my, i made this Swiss roll two weeks ago and it was just simply tasty and the roll shape turned out beautifully. I never made Swiss roll before my first time because I considered it is something quite difficult. :( Big thank you to you, Natasha. I trust your recipes and I tried so many of them, I made the swiss roll 2 days ago and the taste was INCREDIBLE❤, I even made extra frosting to eat it aside with the swiss roll😻😻. But the cake had some cracks when I rolled it. Do you recommend to apply the syrup for both sides or only for one?

That's just awesome!! Thank you for sharing your wonderful review! It helps to roll the cake right away while it was hot out of the oven. If you skip that step or wait too long, the cake doesn’t form the “muscle memory” to create the roll without cracking. I hope that helps for next time!

I made this today and it was such a wow factor in my family. Thank you, Natasha! The step I almost failed at was when I couldn't take the parchment paper off the back of the cake. Next time if I skip the parchment paper and just grease the baking pan with butter would that work?

Wonderful recipe. I've made this several times & the family loves it. One question though. Although I make the syrup stronger than your recipe I still can't taste it. So my question is - is it just there to seal the cake from the moisture of the filling? Can you just do the filling and skip the syrup? Again, thanks for all your delicious recipes!

This recipe is wonderful! BUT WARNING, do NOT use silicone mats!! The cake sticks really badly! Second try: Mine took a lot longer in the oven, I lined it with parchment, however it still stuck a tiny bit so I suggest lightly greasing the parchment as well. I lined the towel with powdered sugar, then dusted the cake as well before pre-rolling. Also, I scored the cake diagonally to keep it from cracking during pre-roll. If your kitchen aid goes up to level 10, I recommend beating at high-speed for the egg part, then lowering to about 8 after adding sugar. Mine was done a lot more quickly then hers, and I followed that 10 then 8 speed rule. Hope this helps!!
