A Caribbean Christmas is incomplete without boozy Black Cake/Rum Cake/Fruit Cake! It is a tradition to soak fruits months (or years) in advance. While it is called a cake it more resembles a pudding (likely adapted from British Figgy Pudding).
Forgot to soak your fruits?
Simmer in cherry brandy & dark spiced rum for 30 minutes- 1 hour on low heat. Cover and let it sit overnight & pulse the next day.
Ingredients:
2 lbs of raisins
2 lbs of seedless prunes
2 lb of a combination of cherries, mixed peel & other dried fruit
3 cups of cherry brandy & 5 cups of dark spiced rum
1 lb of butter
2 cups of brown sugar
10 small eggs (8 large)
Zest of 1 lime & 1 orange
Dash of Angostura bitters
1 tbsp vanilla & 1 tsp of almond extract
2.5 cups of AP flour
1 tbsp of baking powder
1 tbsp of cinnamon + 1 tsp of nutmeg + 2 tsps of allspice
Browning
Yield: 3-9 inch round & 1-7 inch round cakes
