As a child growing up in Yorkshire in the late 1950s to late 60s, I never tasted turkey. Our mam's choice of a xmas bird was always a capon, a castrated cock. Since then, my only experience of turkey came probably 20 years' later it was was a bland dryness, since which I have never considered turkey as a bird of celebratory consumption. A few years ago, during a visit to Leeds, my late partner, Dagmar and I bought a goose from a butcher in Kirkgate Market, Leeds, brilliantly prepared and probably the most odd bird ever presented by Dagmar but ending up as the best thing that we had so far ever done... the xmas day goose roast was absolutely exquisite in every way. Time moves on and sadly, Dagmar is no longer with us, having died from secondary breast cancer in Castle Hill Hospital Queen's Oncology Unit, on Wednesday 19th July, 2017. Although my friends and family have xmas arranged, my arrangements are simple... The xmas bird' is no longer relevant... my daughter has planned a beef rib joint for xmas day. I, on the other hand, will 1 ans away, l most likely spend xmas day alone (and very much looking forward to it and thankful of it) with a microwaveable meal... .

As a kid in Leeds, our mother would always roast a cockerel (a capon, a castrated cockerel) for xmas. Fond memories of the late 1950s to late 1960s. Now I am an atheist and xmas lunch means nothing to me; it's mainly just a way to indulge on an epic and quite obscene way. My late partner, Dagmar (an exquisite Czech lady) was also an atheist although traditionally celebrating xmas on 24th December (for family's sake) with a simple fish supper, consisting of fried fish and a Czech salad (finely diced boiled potatoes, finely diced gherkins and carrots, peas and beans in mayonnaise. This was followed on xmas day with something quite simple, always including home made sauerkraut and dumplings. I cast my mind back, if I may, several years to late December 2007, just a couple of days before xmas... before breast cancer set in, ultimately taking its toll on Dagmar's existence in July 2017, when we had been together since my 50th birthday in April 2002 and we were simply a couple in love. We were in Leeds (with one of Dagmar's interpreting assignments at Leeds Crown Court) and decided to call in on Kirkgate Market, where we picked up a goose quite inexpensively in the late afternoon from a market butcher. Dagmar roasted it slowly during the morning of xmas day and for xmas dinner we all enjoyed an admixture of the roast goose, coupled with the Czech traditional xmas day fayre of home-made sauerkraut and dumplings... simple yet fantastic! This will be my first xmas without Dagmar, since her death in July this year. I've become used to living in solitude without her in my daily life and going for days at a time, even a week or more, without speaking to another human being apart from shop staff, my next door neighbour and good friend, Penny, who pops in now and again for a chat and the odd and unannounced visit by my daughter and grandson. I realised only a few days ago that I currently speak as if I am drunk, with an inability to correctly formulate word sounds... the effect of not exercising my language daily? Probably. I really miss Dagmar and shall dearly miss her individual take on xmas, which is why I intend to take time out and not do xmas at all this year. I'd much rather be by myself right now.

This looks great! I've never been a fan of turkey so we always have pork roast or goose for Christmas, but this year we just might switch it up for a cockerel. Also... whoa, Mrs Food Busker is so glamorous and elegant!

A few tips. First off we the fans need a proper name. Something in line with food buskerinos 😁 Second, you should maybe think about taking in apprentices, if you would like to charge them to finance your shop, the business stuff, I don't interfere with that stuff. But it would be cool to see maybe an episode a week were you train people and passing on your knowledge. You know like a Food Busker Street School. Just some ideas.

cracking video as always brother. do you have any tips for getting the fat from the tray juices? ive tried so many times, scraping it up with a spoon, dropping some ice cubes into it and even mopping it up with bread. I just cant get a consistently good gravy! its always like an oil slick! maybe an indepth video on gravy making would be good? keep up the awesome work buddy, increase the peace🍻

You don't need to bend the rack, its already got holes in it to let the heat under and the legs do the job of keeping it off the tray. Also, nothing about the process of brining locks in the flavours. It lets them in but doesn't 'lock' them.

Don't bother with turkey. Or Cockerel. Just eat chicken. Much cheaper and better. He's only cooking it as it's an ad. No idea why people get turkey for Xmas. Just expensive and ends up dry. I get a couple of chickens. Much better and tastier.
