Interesting. Not a salmon fan myself, but I might be able to get into this. My favorite is one of my own creations as well. I call it the umami unagi. All our rolls at work are inside out, but I prefer more traditional Maki. The nori should always be the first thing to hit the tongue imo. So I invented one of my own. Unagi, a little crab or shrimp tempura depending on my mood, avocado, cucumber and green onion, and crispy onion straws topped with a little masago, and a tiny dab of spicy mayo, Sriracha and hoison or eel sauce, personally I prefer hoison tho. I love the way it mingles with Sriracha. I'll usually either double wrap it or use a large nori sheet for it tho just to give it that extra flavor. Done right, it almost looks like an eel lol.

Hiroyuki, What a interesting roll, Is it rue that the reverse roll was not a part of Japanese culture? Thank you for sharing this food artists skills with us. Cheers, Rik
@rachmatmulia52123 жыл бұрын
Yes, that's right, it's almost rare to see reverse roll sushi in Japan because reverse roll is the American version and maybe it's only in America

What's Hiro think of a sushi bazooka?
@DiariesofaMasterSushiChef3 жыл бұрын
it is interesting...everything in the roll is perfectly in the center...but better if you make sushi rolls with sushi maki...you can make bigger and larger rolls..the bazooka only limits your size of roll
