Thank goodness you explained this difference!! I've wondered for so long and when following recipes, I shop for the dark soy sauce ... it's not difficult to find but not as easily found on shelves as the light soy sauce. Maybe ... someone can post about how to store oyster sauce for longevity. Even sometimes put in the frig, it gets old fast. Thanks, Mandy!!! Love your channel, your vids, your dishes, love you!!!

You can google for things you don't know...like I typed "how to store oyster sauce" and came up, first, with this: "Oyster sauce can be safely stored at room temperature. That said, to maximize its shelf life, opt for a cool and dry place such as your pantry or in a cupboard. Ideally, you should always keep oyster sauce at under 70°F."

Have you tried sweet soy sauce as well? It's a game changer when marinating.. It's quite the same with dark soysauce, but has more flavor to it, cause it's mixed with palm sugar, instead of caramel (from white sugar).. Imo, palm sugar itself have more flavor when heated cause they're made out of coconut, compare to any other sugar..

When I tell my mom Indian mom “okay so they are saying light soy sauce then dark soy sauce…” my mom be like “just bring out the soy sauce from the fridge” 😂 in most Indian local stores don’t have the light one 😭

Also that dark soya sauce is used to bring that salty flavour which she referred to while talking about light soya sauce … I was like .,. Ayoo we achieve that with the dark one 😂

Lol my mom always said i was too fancy with all the different types i have and then amazon ran out of the one i buy and i used just general soy sauce and without telling her she noticed a difference, alwaays loves my hot n sour soup but def is better when u use both lite and dark, same with vinegar... that makes or breaks it for me lol the stuff i gets hard to find and i stock up on it when i go to the chinese store but i dont like going often lol im shy af and i grew up next door to them and my grandpa used their products in his restaurant before i was born and so when i go there its very social experience, i enjoy it but like i said im shy and im white and i go in and order and buy stuff how my grandpa taught me, step grandpa but only one i have had lol hes from hong kong so growing up hed have us order stuff for him and wed drive it to my grandparents since they moved 150 miles away so id like go in there buy candy and sardines in tomato sauce for me and then roasted duck, veggies, preserved veg, seafood and 2 big sacks of rice and my grandpa would request strange things in season like sea cucumber and the monger would be like.... " you eat this?! you know what this is?! but you're white... your parents are white... lol " and that pretty much is the response of everyone shopping there, i dont speak any of the languages but i can always tell by the way people point to me and talk to the workers and the owners smile and nod and i can tell shes telling them shes known me since i was a baby and knows my grandpas family well and the " ahhhh " moment of why this disabled white childs alone buying all that stuff loading it into a wagon or sometimes my cousin would help, an even smaller younger whiter kid lmao as a kid it was funny as an adult any attention on me i assume is negative, somewhere around 15 my brain broke and adhd took over idk what im even typing bout already x.x

I just bought some Thai dark soy sauce that’s apparently very different from the Chinese ones. It’s made from mostly molasses and tastes very licorice like. You live and learn I guess 😅

yea they are quite different. thai and chinese seasoning generally is very different, not to be interchanged

I bought the same except mines doesn’t say dark so I guess it’s just regular soy sauce. It still tastes good in dishes

With the healthy boy, the seasoning soy sauce is called ‘thin soy sauce’, this is your Chinese light soy sauce equivalent. That’s for flavour. The thick molasses is called ‘black soy sauce’ you should use this in half teaspoon measures as it can be overpowering if used too much. But it tastes good when used properly. Golden mountain seasoning is v good, it’s like light soy with more flavour and msg

Also, too much dark soy sauce can "mask" the ingredients. Some restaurants are almost hiding the beauty of the stir-fry by making a black goopy mess. Also! The ethnicity of the soy sauce will have different level of saltiness and flavour. Japanese. Chinese, Korean, Thai, Taiwanese, Philippines. they're all different.

I use the light soy sauce as a replacement of salt for seasoning when I cook some veggies and fried rice that has veggies... It taste much better...

i’m a bit late to this but if you’re unable to find dark soysauce you can use another called “browning” it’s readily available at most groceries. i’m jamaican & it’s used brown meats in many caribbean dishes

I did know the difference, and boy does dark soy sauce last forever! (I know it technically does not, but I had a giant bottle and it lasted for several years. I finally got rid of the rest (half a bottle) earlier this year when I was moving.)

In Swedish cooking they’re usually separated as “Japanese soy sauce” being the light one and “Chinese soy sauce” being the dark one, and yeah in Swedish cooking, or swede-ified foods from other cuisines, it’s only really ever used for the colour and the salt, never really for the taste. One of my favourite snacks tho is just to take some light soy sauce and dip chunks of avocado in it.
