Ingredients: 1 octopus, cleaned and beak removed water for boiling Salt and pepper, to taste 2 tablespoons extra-virgin olive oil Juice of 1 lemon Instructions: Thoroughly wash the octopus under running water and remove the beak. Bring a pot of water to a boil, reduce the heat so the water continues to simmer. Dip the octopus into the water three times, then submerge it and boil for about 20-30 minutes per pound. Check with a knife to see whether the meat is tender, and continue boiling until it is. Remove the octopus from the water. In a small bowl, make a marinade by mixing together the olive oil, lemon juice, salt, and pepper. Place the octopus in the marinade and refrigerate for at least a few hours, or overnight if possible. Preheat the grill to searing temperatures (around 400-500 degrees). Cut the octopus into pieces, and grill until it is crispy and charred. Serve immediately and enjoy!

In the US I think octopus is a scary mystery for most and not something we think to grill but I’ve had it in restaurants and it’s amazing…..so going to give this a try this weekend. Great visual tip to cut off some of the tips while grilling so they don’t get too charred. Have t seen other recipes where they marinade it put I’d imagine the lemon further helps to soften it up. I used to do it like that many years ago.I've found out that most of what he does is unneccsary.I strongly believe that octopus should never be boiled .Europeans have problems with chewy octopus just like Americans but the texture of octopus is chewy naturally.If it's very soft and tender,then you eat something soft but the taste is not octopus at all.

Sounds like you did a great job. I had this served at a restaurant in Costa Rica, and LOVED it! Should you cut the tentacles off of the body first, before putting in the marinade and then grill it? Any difference? Also, I noticed you put the marinated octopus back in the marinade after grilling it. Is it safe to do that? Thanks and GREAT job!
@FOGOcharcoal5 жыл бұрын
I am going to upload a new video with Octopus next week and I’ll cut off the tentacles first. Easier to move around and grill. Marinade, the marinade is after boiling the octopus so it’s fully cooked at that stage. The grilling is just for that bit of texture, crust and Smoky flavor. Totally fine to put it back in the marinade or pour the marinade on top.
