When I eat out and eat the wrong foods in two or three days a little inflammation starts but nerver nearly as bad, I don't eat out often. If I stop Active Advantage for two weeks I can feel the difference. I'm 71 years something now.

Thank you Dr.Gundry. Myself not a fan of any flour stuff, but I have seniors in my family whom I train according to your health advice, who happen to love bread and all the flour stuff and already do gluten-free bread, so now I am going to re-check the ingredients of these. We also implemented a daily intake of psyllium fibre about 3 months ago, so very pleased to hear that is approved by you and the plant paradox diet. Lots of love. 🤗💖🍀

We are truly fortunate to live near two ancient (literally … dating back to Cathare ages) boulangeries and these boulangeries use ancient flour (yes, they maintain the grains!) which do not cause my belly to bloat nor do they raise my sugar levels nearly as much as your typical breads in America. I had stopped eating all breads until we discovered these boulangeries which do use ancient grains. I’ve never heard of « sprouted breads » but here in southern France near Spain I believe the boulangeries stick with the old ways… No sprouting breads around here. Good video. ❤❤

So home made sourdough bread that's been toasted and cooled is the safest bread?
@nas4apps
@nas4apps 11 ай бұрын
I freeze my multi grain whole wheat partially sourdough holding bread after which I toast the slices lightly: freezing and toasting both decrease the glycemic index by a quarter to a third. Do them both: halve the glycemic index or better ... ;) Sourdough must also have a positive impact, I understand. Love this toast with cheeses or fish (salmon) or 81% (or higher) fruit spreads (like home made plum jam). Living in the EU, due to the RoundUp usage, I vote for making US grain imports illegal: it is poison. Tasty and cost effective: Eat in moderation is the key! Bummer! 😂 Thanks!!

1. **Lectin Concerns in Bread:** - Many breads contain lectins, with gluten being the most well-known lectin in bread. - Lectins are part of the plant defense system, and their content increases during the sprouting of grains, making sprouted breads like Dave's Killer Bread less desirable for those trying to reduce lectin intake. 2. **Hidden Sugar in Bread:** - Most breads contribute to high sugar intake, as they break down into glucose rapidly, sometimes even faster than table sugar. - The glycemic index of bread is high, often comparable to or worse than table sugar, leading to concerns about elevated sugar consumption, especially in the context of glycemic index and overall health. 3. **Health Risks of Whole Grain Breads:** - Whole grain breads pose risks due to the lectin called wheat germ agglutinin (WGA) found in the germ of wheat, barley, rye, and to some extent, oats. - WGA can be absorbed without causing leaky gut and is implicated in various health issues, including heart disease, leaky brain, dementia, arthritis, and fat accumulation. 4. **Caution Against Ancient Grain Breads:** - Ancient grains such as camet, acorn, farina, and even gluten-free oats may contain lectins, challenging the notion that they are inherently safer. - Glyphosate contamination in many American oat products raises additional concerns about the safety of certain grains. 5. **Sourdough Bread as a Safer Option:** - While not ideal, sourdough bread, particularly if made using traditional fermentation techniques, is considered a better choice due to the breakdown of lectins during fermentation. - Tips include toasting and cooling bread to increase resistant starch and resist rapid digestion, and the importance of being cautious even with so-called "safe" breads regarding their impact on insulin and triglyceride levels.

Sprouted grains also have more sugar because the seeds release enzymes that break complex carbs down into simple sugars. That's why brewers and distillers malt their grains.

Perhaps ironically, sprouting accelerates fermentation so yeasting organic sprouted whole-grain flour overnight is, in my many years of eating it daily, still healthy since the microbes consume and neutralize the lectins, whereas failing to ferment it is massively irritating to my system even with such exceptionally nutritious flour. I'm glad Gundry did note that, and did so in contrast to commercial "fermentation" short-cut's that don't actually use microbes over time.

Citation needed. I don't even know how sprouting would even occur with fermentation
@philodygmn
@philodygmn 11 ай бұрын
@@aaronfield7899 You're misunderstanding the terms in the scenario I'm describing: because of sprouting, later fermentation of the resulting dehydrated flour becomes accelerated due to the increase in nutrients, brought about in the earlier sprouting process, which then are therefore available to the microbes.

Had to stop eating bread for the reasons cited here. No Dave's Killer Bread since 2015 or so. All "Breads" make me feel bloated. I even used to always buy the Organic Ezekial Bread (Wheat and Raisin Bread). Had to stop because of bloated feeling. I will admit (we have to be honest in this forum) I like my Organic Jovial Cookies and a few others as these things are hard to break. It's really the refined sugar. I keep a spreadsheet diary of what I eat and measure sugar intake EVERYDAY and my sheet tabulates everything. I usually am eating 60-75lbs of sugar (Fruit, Refined White, Coconut) per year. I think the average in the 1970s was around 50lbs/year but now I think it's around 120lbs/year per person. I know I have work to do.

If you watch enough KZbin videos on bread you will come to realize that no type of bread is universally ranked as healthy. The take away is not to eat any bread at all and you can avoid this conflicted topic. Perhaps the best advice is to have small, infrequent portions of bread in your diet and the type is less important.

All literature I see says Ezekiel bread is relatively low in lectins compared to non-sprouted grain breads because the sprouting process significantly reduces lectin content. Sprouting involves soaking the grains and legumes, which activates enzymes that help break down lectins, making the nutrients more bioavailable and the bread easier to digest. Although Ezekiel bread still contains trace amounts of lectins, they are significantly diminished through sprouting, baking, and other processing steps. This makes Ezekiel bread a good option for people who are sensitive to lectins but still want a nutrient-dense, whole-grain bread.
