Smoked eye of round with oak and cherry. Then sliced super thin for smoked roast beef sandwiches. Peppers onions. Horseradish cream cheese. Absolutely incredible.

The stock makes a tremendous difference if you want to reduce it to make a sauce. You can however help yourself out with some gelatin sheets so you can at least "fake" the nice velvety consistency of a demi glace style sauce
