I just want to add as a follow-up to the video - I know that I may get some push back about the dry canning, in which case I would say "you do you." But as for me and my kitchen, it ain't happening. I am sincerely concerned about people who are new to canning, doing something that can be dangerous, and doing harm to themselves or their family. Thank you! I've seen some of those "dry canning" videos where raw fresh food is put into a jar, without liquid and canned. I wish some of these folks, who proudly call themselves "Rebel" or "Rogue" canners would actually do the research on how pressure canning works. Wish they would learn the role of water and the ability of that water to circulate within the jars to produce a safe product. Like you, my fear is for people new to canning. Those who are often seeking a faster and/or easier way to get the job done. Sorta like using canned biscuits instead of making them from scratch. There's nothing wrong with canned biscuits. That's simply a personal choice that doesn't carry the risk of dying from the most deadly toxin in the world. Quote: *Botulinum toxin is the most poisonous substance known* . Intoxication can occur naturally as a result of either wound or intestinal infection or by ingesting preformed toxin in food. en.wikipedia.org/wiki/Botulinum_toxin At least give new canners what they need to know, in order to make informed decisions on how much risk they are willing to take in their kitchens. I get push back too. That I've been brainwashed by the government, etc. Yet, it's often apparent those doing the pushing don't realize the role of numerous state university extension services laboratory research in canning safety. Nor the same done by canning supply companies. Especially those who offer instructions on how to safely can using their equipment. Can you imagine the lawsuits if the instructions, in their canner manual/book, causes illness and death? Apparently, some "Rogue" canners have never actually studied the history of canning. Don't understand how many died along the way, as improvements were made and standards developed that led to today's safe products. If they did, they wouldn't be going back into history to use methods that have been proven, with people's lives, to be unsafe. FWIW.... I grew up on a farm where all canning was done using a waterbath canner. My mother didn't own a pressure canner. One of my chores was to help with harvest and preservation of food from our large gardens. I know how to can green beans that begins with planting seeds and ends with canned beans in a bowl on our supper table. Yes, I ate them and lived. Will I teach that preserving part. Absolutely Not. My mother and grandmother knew, step by step, how to process those green beans BEFORE, DURING and AFTER to ensure the most safety possible, under their circumstances. Often parts of that are missing from "Rebel" canner's instructions.

Thank you for the info on dry canning. I have been canning less than a year and I know when I first started I would have believed this this could be done. Thanks for telling the real deal on it! I to have been thinking about investing in tattler/harvest guard lids and learning to use them as back up. I seen a video yesterday about using the tattler gaskets with metal lids. Have you ever heard of this before? Be Blessed

I can safely say that I have never seen that - the tattler gaskets with metal lids. I think people are getting desperate to preserve foods and are trying to find ways to do it, when they can't get their normal supplies.

That is very interesting, and exactly what I figured - making do with what you got. I do know that I keep my metal lids after I used them, for future use and storing goods. Honestly, I am all about NOT wasting, and if this works, more power to her! I may actually give this a try......

I’m a little behind on your videos Due to some Job changes and I have missed keeping up with you but I’m catching up today. I’m with you on the sewing. I was taught how and my Mother was a Beautiful seamstress but I absolutely hate using a sewing machine!! Lol I enjoy my knitting needles and crochet hook though! Hehe! I love your Apron though! Sorry I doubted you! Last I had looked, steam canning had not been approved. Had to recheck my facts after watching THIS video where you were warning about other unapproved canning techniques (while you were steam canning, lol) . Wisconsin University DID do a study on steam canning , in conjunction with the USDA, and it HAS been approved for high acid foods. Now I could kick myself for throwing away a steam canner I was given a couple years ago😭

Loved this video, thank you. At the end it showed a bird feeder nice and clean. I have 2 bird feeders but some kind of ants tend to get into the bottle juice. I tried the Vaseline trick. Didn't work. I'm having to change the juice to often. Do you have an answer. Rio Rancho, NM

We occasionally get ants out there, but I find if I can keep them out of the flower bed, then they usually stay away from the bird feeders.

I love the tip about trying one Tattler lid at a time. I have stored some for a time when regular lids may not be available. I have to admit that I was a little apprehensive about using them because I had seen a video a long time ago where the jar exploded. It probably wasn't because of the lids, but it did scare me and I have been canning for many years. I didn't know that people dry can vegetables, etc. I have seen people dry can in the oven dried goods like flour, dried beans, rice just to seal the jars.

Jars bursting are normally from a sudden temperature change, or a flaw in the jar. I can’t imagine lids having anything to do with it either.

That’s a unique praying mantis! How cool! I live in the NE corner of Oklahoma, I think the humming birds are gone already, we were seeing sooooo many and now we haven’t seen any in two days. I’m going to keep the feeder out in case some are still migrating! Hope you didn’t get any bad weather with those tornado watches.

You can always practice canning with things from the market too. If you see a good sale on berries for instance, you could try making some jelly. :) I learned to can long before I gardened.

Allie Bennett When I first ventured into canning, I was given horrible advice! I reached out to a friend to learn. She thought me how to make strawberry jam and we put it in quart jars (yes, quarts) and flipped the jars over. She also pulled out her steamer canner and showed me how she canned meat in it! It’s when people do things irresponsibly that the government steps in and lays the hammer down. For all those who say “Well that’s how my grandmother always did it..”, I once had a conversation with my grandmother (1902-1993) about the good old days. She said that while yes, the values back then were special, she was also quick to point out that people died. They died a lot. They didn’t have the sanitation practices, the medical knowledge, or the infrastructure that we have in modern times.

Her family and her husband’s family have homesteaded for three generations and she has been a Master Food Preserver through the local extension office for over 25 years.
