I made this cake right after I saw the video, I followed the instructions perfectly. When the cake was done I let it cool and I frosted it with the whipped cream I added a tiny bit of stevia to the whip cream. My first bite was oh no this tastes so eggy, of course it's going to taste like egg, it has eight eggs in it. I decided I was going to have to choke it down because I wasn't going to waste 8 eggs. I put it in the refrigerator and decided to have it for breakfast the next morning. To my surprise it was absolutely delicious cold and didn't really taste that eggy at all. This is definitely going to be my go-to when I want a desert. Thank you so much for the recipe.

I think this recipe needs to be modified with a heavy cream and perhaps a touch of vanilla. A little vanilla would go a long way in this cake for a Carnivore.

The standard technique for folding egg whites into a thicker material is to put 1/3 of the egg whites into the thicker one, whisk it until completely smooth, then fold in the rest of the egg whites, which will incorporate more easily because it was done in that 2 step process.

I haven’t read through the comments, and I’m sure someone has already said it by now, but, for the frosting, one thing you could have done, would be to mix in a stick of unsalted, softened, room temperature butter, after the creme is whipped stiff. Or even just a half a stick, whatever you like. The butter makes the frosting a little more temperature stable, so it doesn’t get runny so fast if you’re not serving immediately, and in my opinion, butter is always a plus. ❤ P.S. THANK YOU! I’m doing my own sloppy version of carnivore, I can’t afford “clean” LABELED meats and animal products, so I still just eat foods from Aldi, but I’m feeling much better, having less headaches, and have lost a good 15-20 lbs! I only cheated one day, recently when I made my daughter a big, four layer coconut creme cake for her 12th birthday. I definitely ate a big piece! And It. Was. Awesome. But if I had seen this video first I would’ve eaten this instead! It looks great! I’m doing this for myself from now on when it’s someone’s birthday. We have six kids still living at home, and I’m not forcing carnivore on anyone. I make carnivore foods for my husband and myself, with plenty available for whoever wants it, but I still give the kids the stuff they want too.

My life-long chronic asthma is also GONE. Within three weeks of carnivore eating I no longer use an inhaler multiple times a day to live. It’s been 1.5 years. Had been mostly vegetarian for 40 years.

If you whip the HC w/ some softened cream cheese & some butter, you'll get a great consistency that won't "melt" and is very like a traditional carrot cake frosting. As a carnivore, you can use glycine powder for sweetening, if you like. I'd also add a splash of no alcohol, pure vanilla extract.

I’ve made Kelly’s cake multiple times and it is so hard to stay out of. It really reminds me of my mom’s cream puffs that she used to make in the 70s when I was a teenager.. If you want something and you just don’t know what you need to make this cake. I can eat it all in like Four days. I just make a single batch in an 8 x 9 or 9 x 9 pan. I found that works best.

My daughter made me a Pavlova cake, which was very similar to this, except the Pavlov only uses whipped cream. Like yours, it was delicious and airy. We made custard out of the egg whites and had that another day. In both recipes, we did add vanilla for flavor. It's so nice to have a treat that is safe to eat for special occasions.

I made this cake for my dad's birthday, he's mostly Carnivore for getting his diabetes under control. I added a little bit of keto vanilla collagen to the whipping cream with his permission and all of us enjoyed it, even my non keto/carnivore mom! Definitely will be making this for family events from now on when cake is present, at least as cupcakes. I did bake the cake the night before and stick it in the fridge after it cooled overnight. Barely tasted like eggs

Looks good! I will have to try this. You can use a piece of parchment paper in the bottom of the cake pans as well. Just use the bottom of the pan to draw a circle on the parchment paper and when you cut it out, it should fit perfectly.

I have made this cake many times for special occasions and have always enjoyed the results. I make it in a springform pan with parchment paper underneath and just do one layer. I have made it plain as well as with vanilla and a little stevia when it’s for guests. Everyone is very surprised by how yummy and light it is. It reminds me of a soufflé. I would follow Bella’s suggestion to use a low salt cream cheese. I add a few berries on the side for non-carnivore guests. And I will consider the honey drizzle for guests as well. I have been a serious carnivore now for 2.5 years but if I have a little honey on this one cake for the first time ever I won’t freak out. I am pretty sure my ancestors would have eaten some honey if they ever had the chance.

I made this cake for my 2nd Carniversary! For sweetness, I sprinkled 1/2 to 1 teaspoon a glycine onto each slice. It was great, but it was quite a journey. Here's what happened. Because I used small 20cm cake tins, this recipe filled both tins, so that I did not have to double the recipe. Unfortunately, after I took the first one out of the oven after 25 minutes (preheated oven temp. 150°C) and turned it over onto a cooling rack, I noticed that the middle of the underside was runny. So, I put it back into the baking tin and baked it for another 10-15 minutes after raising the temperature to 180°. The raising of the temperature and all of the messing about probably contributed to it not being as light and airy as it should have been, but after both layers of cake had cooled, I frosted them with the whipped cream and put the now frosted layer cake in the fridge to eat on my Carniversary the next day (I just assumed it would taste better on day 2). After cutting away the eggy, omelette-like bottom part of that problem layer, it tasted really nice, a bit like a twice-baked soufflé. I ate the part that I had cut away, but just on its own. Anyway, next time, I will just bake it for about 40-45 minutes at 150°C. My oven is 30 years old, so that may have had some influence on the timing. Because even water tastes sweet to me, I expected the cake to taste sweet. However, though it had a hint of sweetness, the salt in the cream cheese took over. So, I sprinkled some glycine on for sweetness. I am no fan of cooking or baking, but baking this cake once a year for my Carniversary is great!

If anyone makes this recipe, make sure you use a pan larger than 8". I'm not sure what size she used here but the 8" does not cook through with these settings and time so you'll have to adjust that or use a larger on. It was super jiggly and wet so I had to cover and bake for another 15-20 mins!

I’ve been thinking about intentionally including a carnivore cycle, the loophole allowing a small amount of honey on carnivore just seals the deal. Keto helped a bit with weight, but didn't make me feel anywhere even remotely as good as carnivore does. Keto also didn't get rid of any health conditions for me, but carnivore has. @@relocatetoncwithrealtormaia You have the so called Newbie Gains from lifting weights , you probably lost some fat but replaced it with muscle its a good thing keep going. Newbie gains refers to the rapid increase in muscle and strength that often occurs when people with little to no previous weightlifting experience start training intensively. Typically, these people also gain very little fat or even lose fat while gaining a considerable amount of muscle. People who get a bit of fat are on the so called bulk stage and that doesnt apply to your case. You most likely lost fat but gained muscle and the scale stayed the same. Look at your body composition if your muscles feel harder and tighter and you gained a bit of stength you 100% gained muslce mass. Muscle is good it will boost your BMR and NEAT (more muscle you have more calories your body burns just by being alive). Trust the process and keep doing what youre doing it takes time to get where you wanna be especially since you're not having that much fat to begin with.

I’m not carnivore, I eat a little fruit and veggies and yogurt. I like to use monkfruit and stevia and I definitely eat cocao, so I’m going to do this with some lemon zest and a monkfruit/stevia sweetener. I can definitely understand how it would taste sweet to you, my palette is a LOT different than just whole foodies. I’ve leveled up😅👀and thank you, I just subbed!

Im I the only 1 wondering where the sweetener(s) would make an appearance...? Cakes r sweet but I only saw eggs, cream cheese, milk... This is pretty similar to the base for Angelfood Cake too! I made 1 from scratch for a bday surprise and It was a smash hit!

Thank you for your creativity I got diagnosed with a lot of food intolerances. The main being gluten and sugar. I found carnivore to be the best diet for me but it dose get boring but this cake looked delicious can’t wait to try it.

I also have a hard time with the “boringness” of carnivore. For me, food is more than food, it’s entertainment, an experience! I miss Chinese food, Mexican food, Italian food… Sometimes carnivore just makes me feel like a dog feeding on chow. I miss the food experience. I’m looking into more interesting recipes to shake things up. My friend said she takes chicken tenderloins, and wraps them in bacon before baking, grilling, or air frying. I think that sounds good.

TIP. Cream whips faster and fluffier if you put you bowl and beater/wisk in the freezer to get really cold before hand. Cheers!

One of the reasons carnivore is extraordinarily healing is because it is zero carb and so induces frequent autophagy. For that reason I would say honey is not carnivore but “animal based.”
