Easy and Healthy Sheet Pan Chicken and Veggies

INGREDIENTS:
🔹 2 medium zucchini (about 11 oz), halved length-wise then sliced into half moons
🔹 1 large red pepper, cored, cut into chunks
🔹 1 red onion, cut into chunks
🔹 9 oz baby broccoli, trimmed and cut into pieces of equal size
🔹 3 lb boneless chicken breast, cut into bite-size pieces
🔹 5 garlic cloves, minced
🔹 Kosher salt and black pepper
🔹 2 tsp dry oregano
🔹 1 tsp paprika
🔹 1 tsp coriander
🔹 1 lemon, zested and juiced
🔹 1 tsp white vinegar
🔹 Extra virgin olive oil (Private Reserve)

I just made this and it was very good. We like spicy so I added serrano’s and red pepper flakes. We also had sliced tomatoes with olive oil, balsamic vinegar and feta cheese.

This was awesome, quick - it is bursting with flavor and the chicken is moist and tasty. Just add olive oil and cut chicken to a ziplock bag and rub the oil in the chicken leave in bag until all veggies are cut. Your food is amazing. Love love love

You can change up the spices here, Sylvia. You can do more oregano and paprika, use a little cumin, or something else that you like
