Ive always wondered why we beat out the C02 out of a proofed dough. Don't we want it baked light and fluffy?

Knocking the air out is almost like resetting the proofing process. It can only reach a certain volume before it begins to collapse again anyway, so we always knock the air out before the final proof so that it can reach the maximum volume again. Otherwise you risk it over proofing and collapsing during the baking/cooking process
