Removing an engine from any carbureted car is easy, especially GM vehicles.Theres almost never more than 6-7 wires, and everything else is just removing bolts and nuts. Penetrating oil on Chevy exhaust studs/bolts is a must, they are only 3/8 diameter and often break off, usually not an issue on Fords which used 7/16 manifold studs. I keep telling my neighbor, if you cant work on an old Chevy you have no business trying to do anything on any car.

Just curious, why not take the engine and trans together? I know you guys know a lot more about this stuff than I do, but I’ve done it with my Camaro both ways and it seems a lot easier to me to pull them together.

When I put an engine on a stand. I pull the head off the stand and mount it to the block . And then slide it back in the stand. My two cents
