As a follow up chef you could make these as a base for a great tasting sandwich. Since flour is hard to get in some places right now making a bunch of these at once then chilling them for later use (sandwiches I mentioned) would be great. Ground beef seasoned with soy sauce, garlic, onion, and a little minced chili pepper would make for a filling meal. What do you think of?

amazing chef! what i learnt from home is make a roux with oil and flour, and brush it on the flatten dough before the scallion are added, that really helps with keeping the layers separate :D

I'm from RSA. Been to Zim a bit. But I've heard from friends that things are getting better. Things have been so bad so there is a lot of potential to develop markets. Zambia is starting to thrive though. Might move there to work. Can make nearly 4 times the salary on the same job than in RSA.

I have a Chinese Mother in law who makes these all the time - she doesn't add 5 spice, its just spring onion for the flavour. But the main difference is that you need to fold in vegetable oil, several times - they need all this oil to make hem flaky and crispy all te way through, not just on the surface. For the dipping sauce, we'd use a black vinegar (Chinkiang) not rice vinegar - maybe 1/3 vinegar to 2/3 soy. And you'd always add a quarter or half teaspoon of sugar to give the sauce a sweet/sour note. They are so easy to eat, and so yummy even on their own without another dish.
