Thanks for your analysis and recipe. It’s the best guide to make scallion pancake. I rested the dough in the fridge overnight and made #2 and it’s so much better than all the ones I made before. So scrunchy and so many soft layers. Thanks again. Hope you will post more videos in the future.

I just made your scallion pancakes tonight. I didn't have Chinese flour so I used Gold Medal All Purpose Flour. I also let the dough rest in fridge over night. Oh my god. Hands down this is the best recipe ever!!! Thank you for making the effort to perfect this recipe. I used the second folding method and achieved so many layer!! I have been looking for a legitimate recipe for 2 years. Some of the ones I've tried was close but still missing that flakey chewiness. I'm definitely going to remaking this over and over again!

I rested mine for 24 hours. I did not put a plastic wrap to protect the dough from drying up before covering with a lid to rest the dough. Slighting regretting that but after kneading it the dried part was tucked inside so it was ok. I did the scroll and cut thread method. Both came up really crispy but the cut thread was the crispiest. Also I made a roux instead of pouring hot oil on the fillings. I think I made it too thick cause it made my pancake slightly dry. Overall this such a delicious recipe. I wish you can upload more recipes in the future.

yes! my mom always did the first version but actually folded and rolled it up twice! idk if the number of layers will be noticeably different. also the oil flour paste is so much better than what I've always done, which is straight oil and raw scallions.
