Easy Fried Eggplant - Italian Style

Hands down this is one of the best ways to cook eggplant! For this recipe I turn it up a notch by adding some Italian love and goodness with two easy ingredients. I show you how to easily make fried eggplant slices but also give you tips on how to use them! You can even reheat them using a toaster oven, so in the off chance you have leftovers, you can still use them.

Be sure that you dab the slices with paper towels to make sure that they are dry before the flour. And don't put them on paper towels they will get soggy, put them on a cooling rack that is on a paper towel lined cookie sheet to drain. If your oil is hot enough there shouldn't be a lot of oil to drain anyway.

Thanks for the additional tips! I haven't found an issue with the paper towels making them soggy though, they stay crispy for me!

can you air fry or bake instead?

I don't know the air fry settings but yes you can bake it too. Set the oven to 350F and bake 15 minutes on each side. That's according to one of my readers who wrote in about a week ago, and I'm sure it will taste great!

A spritz of olive oil spray on the breaded eggplant then 370° pre-heated air fryer for about 17-20 minutes, turning half way.
