Easy Key Lime Cake with Key Lime Cream Cheese Frosting

This key lime cake is the ultimate summer party cake. It's pummeled with toasted coconut and boasts the juice from 5 limes. The punch of lime juice and zest is refreshing and so tasty. We loved the delicate, fluffy and moist cake layers. Plus it's not overly sweet. This is a highly enjoyable cake!

Recipe for Sponge Cake (makes two 9-inch cakes)
►6 large eggs, room temperature
►1 cup granulated sugar
►1 cup all-purpose flour
►½ tsp baking powder
Key Lime Syrup Ingredients:
►1/4 cup freshly squeezed lime juice (from 3 medium limes)
►3 Tbsp granulated sugar
►3/4 cup warm water
Key Lime Frosting Ingredients:
►8 oz cream cheese, softened
►1 cup granulated sugar
►16 oz cold sour cream (full fat)
►3 Tbsp lime juice, freshly squeezed (from 2 medium limes)
►1 Tbsp lime zest (from 2 medium limes)
Topping Ingredients:
►2 cups (7 oz) sweetened shredded coconut

True Key Limes are very small. What Natasha used are Persian Limes. You can't get Key limes all the time, just certain times of the year. This recipe looks fabulous!! I bet lemon would be good too, or orange. You could use bottled Key Lime juice. Chuck and Millie's is a great one.

I dont like your cake, it is way too eggie and I mixed it on high for 8 minutes like you said and I got a larger volume than you did. It fell in the middle in my oven and is not spongy like it should be. It smells like scrambled eggs when baking and tastes like eggs too. Did not work for me. Now I have to make another cake to use with your key lime cake as I cannot eat this.

Hi Mary. I’m sorry to hear that. It’s important to make sure your eggs are fresh and not to over-mix the batter when you fold in the dry ingredients or it will deflate the batter. Sometimes the eggy smell is hard to avoid, especially if it’s cooled in a drafty area. Vanilla extract, lemon/lime juice or zest may help with the taste of egg in the sponge. Lastly, if your oven is too hot, it could also cause the eggy smell/taste. I hope that helps if you make a sponge cake in the future.
