I am making these now. Let me tell you, the dough tastes soooo good. I can't taste the chickpeas at all. The taste of the dough reminds me of the inside of a peanut butter cup. Super creamy and delicious. Next time I make vegan peanut butter cups I will use this recipe for the inside.(:

if you add about a tablespoon or two (i just eyeball it) of applesauce, it adds sweetness and moisture and turns it into a blondie bar! i usually just use a cake pan tbh because that’s about the amount it makes and it looks like a cookie that way 😅 also i bake for 30 mins to get a nice crisp on the outside

Also, I saw a recipe where you reduce the Aquafaba down and chill it and it really helped get the stiff peaks that I saw other people were getting without reducing it. I think maybe the brand I use with low salt also is less viscous.

The reason including protein makes you feel more satiated is because it doesn't cause blood sugar spikes. So if you have protein with your (refined) carbs it will help keep you fuller for longer without spiking your blood sugar. Or so the dietician told me when they were worried about my blood sugar (was a false alarm). Love your videos, and your hair was looking totally on point today. 😍

These were GREAT! I did use peanut butter instead of almond butter. Very moist even after 15 minutes of cooking. I will try to add a tsp of baking soda in addition to the baking powder next time and cut down slightly on the maple syrup and hopefully they will be a little more crisp. But the taste was perfect!

OK people! I made these and they are awesome. Changes: substitute agave for brown sugar and also forgot to add the chocolate chips in the end. Cooked for 13 minutes at 350F. My kids are eating healthy cookies for lunch break today. Luv you Rose. I am making something crispy tofu/ not chicken for supper tonight. Yeeee Ha!

I tried making a sponge cake with aquafaba. The texture was off by a bit. I let the cake sit on the counter while I made dinner. I also read that cream of tarter helps it keep the right consistency. Those cookies look delicious!!

Seriously, awesome recipe! You have some of the best recipes that are so simple to make. I'm not completely vegan (pescatarian), but I have a TON of food intolerances and allergies. It's hard to find food I can tolerate and keep me healthy (and actually tasty is always a bonus). This will definitely be added into rotation. I always have peanut butter, chickpeas, and vegan chocolate chips in the house! Off to experiment with them now! 😆🍪🤯😁

JoeAceJR Oats are technically be gluten free, but can be contaminated with gluten. If you aren't gluten intolerant, normal oats should be as good as gf oats though.

I usually think cooking show hosts are a bit dramatic when tasting their own food. But, dang you are right! I made these and ate most of the dough while exclaiming "How is this so good?! It's chickpeas!" I also sweetened with maple syrup, date sugar, and molasses!

In India ..we directly use Besan (Chickpea Flour)...Bit roast till aroma is out and we make ladoos, that is not vegan as the recipe uses Ghee, Clarified butter. But we can use oven and make cookies and vegan.

I have chickpeas going in my instant pot... I’m going to be making this! I’m going to add a few teaspoons of almond flour, use coconut sugar instead of maple syrup, and might add a few drops of liquid stevia in replace of the vanilla extract... Also, a little bit of cinnamon, nut meg, and chia seeds, as well as baking powder w/ a little bit of apple cider vinegar. I’ll let y’all know how it goes!

Add a bit of water or milk substitute if you aren't using liquid sweetener. It will help the consistency.

Those cookies are wicked similar to the black bean brownie bites that we make. My son is a chocolate addict, and those I don't feel guilty about giving him and he knows that you can make sweet treats in a much healthier way. These will be up next when we bake something sweet again!

I just tried this recipe with chickpea flour (2/3 cup), and the dough still had that funky chickpea aftertaste that I can't stand, so I added lemon juice and then it turned out perfect :) (don't worry, you can't really taste the lemon)

I didn't measure it, I just kept adding juice until it tasted good :P I used chickpea flour cuz that's the closest I had on hand. But even when I use actual chickpeas in hummus I still get that aftertaste until I add lemon juice, that's how I came up with it

Different brands have differing viscosity. I find it helps to dehydrate the bean water in a mug in the fridge for a couple of days before using to make meringue. It doesn't keep well due to the protein content so it should be used within a week, unless you fridge is very cold. Or, you could cook it down to concentrate it after draining the beans, and cool it before using.

I’ve seen some recipes that use unwhipped aquafaba in place of flax egg etc. I’ve been wanting to try the chickpea cookies yay 😃 I’d use coconut sugar (low carb and glycemic) and less maple syrup.

I know what you mean about protein. I used to only consciously add legumes to dinner but now I make lunch around legumes also and feel great all the time. I notice when I miss a second serving of legumes. I guess most veg protein is from legumes (nuts do not usually form meals) so we probably noticed the same thing.
