I made a no bake vegan cheesecake and it was really good but since it was "freezer baked" it would start getting soft/melty after some time out. Now THIS is a recipe I'm definitely going to try since I can't do dairy and gluten. So excited for this and thank you for sharing it!

I have to try this now. Your new place looks nice, one of my favorite places Ive lived was built in the 30s and had an old 1950s O'Keffe and Merrit gas stove with the griddle in the middle and it still looked like brand new. and a really old and huge lemon tree in the yard full of huge lemons that were almost sweet. I just love your videos so much, you’re super charismatic. I will try this recipe for Christmas this year, last year i did a Vatapá a tradicional dish from the northeast of brazil, but instead of bread or flour to thicken the dish i used black-eyed peas (blended as a paste) and added nori sheets to give that sea food flavor. Its really easy to do, and super delicious, filling and nutritious

My adaptation of Sauce Stache's version of this recipe is in the oven right now. UK here, so no Graham Crackers, but Digestive biscuits instead. Also, you have to sell a kidney to buy Maple Syrup here, so I have used Golden Syrup. Can't wait to see how it turns out. It has browned on top very quickly, so I have had to turn it down half way through.

Okay. I can say that this turned out brilliantly. There is the tiniest beany hint in the aftertaste, (maybe that's because I knew it was made with chickpeas) but otherwise I don't think you would ever know it wasn't a dairy cheesecake. I topped mine with a lemon curd layer that I love with cheesecake.

I made this when it first came out on Mark’s channel. I used tahini instead of peanut butter, and maybe just a tad too many chickpeas. Also, all the fat melted out of my crust and dripped to the bottom of my oven. If anyone knows how to prevent that, I’m all ears. But in the end, after my cake had cooled, it was fantastic. Be generous with the lemon juice. The lactic acid was a great idea. Definitely put as much maple syrup as you can afford. You won’t regret it. This cheesecake is so healthy, you can even eat it for breakfast!!!! Word of caution, though, you simply absolutely must leave it in the fridge overnight.

To avoid all the butter, you can use a combination of nut butter and water for the crust. I would also use unsweetened soymilk instead of coconut milk because soymilk has enough fat to make it work. Two questions: how long did you bake the cheesecake, and could you have used your Midea oven to bake it? Thanks and happy holidays!

This looks inviting, Merle, but I'm wondering if there is a good sub for the coconut milk, as I loathe the taste of coconut, lol. I know you said in the video that it was slight, but my spidey senses wonder if I'm more sensitive to that taste. Otherwise, this looks so interesting to make. I haven't ever attempted a vegan cheesecake, figuring I'd be mostly disappointed (I mean, it took me three years into going vegan before I'd give vegan cheese a try!). Do you think unsweetened soy milk would work, or is that not creamy enough? Or maybe a soy creamer? Though I'm not a big fan of those. Anyway, I'm so glad you enjoyed it.

I have loved Mark for years. He looked cuter husky, but hey, if he is healthier, that's good. Poor Monica, having to eat all those trial run recipes. It must be absolute torture to have someone who wants to cook for you constantly. "Try This! Try That!" "Oh, *must* I?" How is she not the size of a travel trailer? Meanwhile, Miss @MerleONeal, this looks amazing. My friend who used to make baked cheesecakes is probably spinning in his bag right now, eating his heart out. Or whatever cremains have to eat. Yeah, his sister was someone you would want to see you next Tuesday. But bless his heart, he tried, and his were not terrible. Yours look like it will be better, lighter. And this recipe can be adapted with some cocoa or whatever, to make flavoured versions. You could add amaretto to it. Or creme de menthe. Oh, wait. Not Vegan. Mint schnapps! This look delicious! I’m far from vegan, but this is a recipe that you’ve sold me on wanting to try, Merle! I will say that I don’t love the idea of sneaking vegan food in as the real deal, just because of the amount of possible allergens. This recipe could literally kill some of my family. But if you know EVERYONE who is coming and you know FOR A FACT, beyond a shadow of a doubt, that no one is allergic to any of the ingredients, then go for it! I am not sure... you'd have to compare the fat content of both! you might be able to sub some of the fat with more cashews
