Definitely going to try this with the shortbread crust! One recommendation I have for this pie recipe is to exchange the two whole eggs for one whole egg begin with his behavior plus two additional egg yolks. It's just a small change but it makes the filling feel a bit more rich and decadent.

My mother's spicing included sugar and salt plus cinnamon, cloves, mace, and ginger. This is how I think it should taste, being that's what I grew up with. She always made her own flaky piecrusts, which is beyond me. I use store bought.

cosmetica529 if your pie looks wiggly after taking it out of the oven, it means that it's done, but loose . it needs time after being taken out for the pumpkin custard to firm up.
