is there a reason why a person couldn't just change both t stats and re-use the housing?

Yes you can do that. The reason most people change the entire housing is because it isn't much more than both thermostats and you get a fresh housing.

A 12 year old car w/ original thermostat, it was probably time for a new one. I change mine at 10 years. Can you do a review on that electric wrench??

Can you just buy a gasket for the temp sensor without buying the sensor?

The gasket is just a simple oring so you can probably go to the local parts house and ask them to match up an oring or you can buy the sensor here for $12 amzn.to/43X1ZKU you could also buy this o-ring kit and pick the correct size o-ring amzn.to/3xxtKxG
