Absolutely beautiful moist and fluffy cake! I made half the batch for a bundt mold I have since I wasn’t planning on filling. So I did 30 minutes baking instead of 40. With organic soy milk and safflower oil and white unscented sesame oil that I had on hand. And half reg fine flour and half rice flour. I’ll be adding a little coffee next time. I drizzled vegan chocolate on top, so it became crispy when cooled. I served to my husband and he loved it and couldn’t believe it was vegan after I said it when he had finished his first slice 😂thank you so much will be using on cake occasions!!! Ultimate 🙌

I made this with my stepdaughter the other day. IT IS AMAZING. I know I've mentioned this to you before but when she tasted it she was like, It tastes real. *rolls eyes*. Hi! I was wondering if I could reduce the amount of sugar from 2 1/2 cups to just 1 cup? I don't like my desserts too sweet so do you think the texture will the the same?

The cake isn't overly sweet in my opinion. I've never tried reducing the sugar, but cutting out most of an ingredient will definitely affect the texture. Yep. Baking is a science and so when you adjust the recipe it will change the end result.

Yes, but coconut oil melts very easily where as vegetable shortening is stable at room temperature. So if you try that, make sure to keep the frosting and cake in a cool location so it doesn't melt. Enjoy!

I put some in the oven. But 40 minutes was way to long to wait!! So I put some batter in a mug and microwaved it for a under 2 minutes and best decision ever! It's soooo damn good! I even put some chocolate chips!!!! Thank you!!! And may I add, I used coconut milk instead and used just under 2 cups of sugar.
