how to make vegan chocolate chip peanut butter cookies! They're melt in your mouth delicious.
** makes 15 cookies **
ingredients:
1 C natural peanut butter
1/2 C maple syrup
1/2 tsp vanilla extract
1/4 C + 2 tbsp brown rice flour
1/8 tsp sea salt
1/3 C vegan chocolate chips
** you could use any nut butter you want **
1. Preheat oven to 350F
2. If you're using a new jar of nut butter make sure to mix it well to combine the oil that has settled on top.
3. In a mixing bowl combine peanut butter, maple syrup, and vanilla extract.
4. Add to flour and sea salt in another bowl and mix well until just combined
5. Then fold in chocolate chips or use your hands to mix them in
6. Use approx. 1 tablespoon of dough per cookie. Form small balls of dough and slightly flatten each cookie onto a parchment lined baking sheet with a fork
7. Bake for approx. 10 mins.
NOTE: bake time will vary if you change the size of the cookies
