I made a similar recipe in my standard blender. Let the nuts soak longer and let it blend longer on a lower speed, sometimes I need to add a tad more liquid.

Try running the cashews (unsoaked) through a food processor until they become cashew butter and then add in the rest of the ingredients.

I made this recipe for a group of non-vegans and everyone loved it. Seriously delicious! I didn't have enough cashews so I used a mix of hemp seeds and cashews. I also added a pinch of salt to the filling and crushed walnuts to the chocolate topping. Thank you for an amazing desert!

I have used pumpkin seeds in recipes like this before and it works well it just makes it greenish. I used it in a few of the cheesecake recipes because my sister can't have cashews. They were still absolutely delicious

Thank God for a banana-less ice cream base recipe! I made some kitchen sink ice cream bars inspired by these and they were delicious. I put meringues, strawberries, and almond extract into the ice cream base instead of coffee and made the bottom crust out of crushed chocolate chip cookies stuck together with agave.

I make an almond chia snack that is really similar to the bottom layer. I add oats and almond butter and roll them into balls. Perfect pick me up snack for mid day! Also proves that I should make this immediately because I will love it!
