Yes, in Japan, Curry restaurants would add apple sauce into their sauce for the extra sweetness. It's a game-changer. Good one. I also make eggplant, sweet potato as Katsu for variety.

If you have an Asian market near you, buy some S&B curry powder. It’s made in Japan and it’s the best. Also: I add a grated apple when I cook the aromatics. You’ve inspired me to make Japanese curry for dinner!

When I was living in Japan it was so hard to find a vegan katsu, so I'm so happy about this video! Couple of fun facts: the word katsu is derived from the german word Kotelett (or maybe the English cutlet?), but a katsu is actually quite different from an actual Kotelett as katsu more resembles a Wiener Schnitzel. Also, when I learned Japanese the word "wagamama" was the funniest word ever for me, it means "selfish" btw, so not sure why this place is called like that, but I like it :D

A lot of Japanese curries use apple powder for sweetness and flavor. You can try grating an apple into your sauce for more sweetness or sub out the sugar

I don’t do tofu much, but found some 2lb extra firm tofu cutlets for sale and baked them after rolling in cornstarch. So simple and good. Gotta redo with your seasoning ❤

I’m excited to try this one! Have you ever froze your tofu and then thaw it? It gives the tofu a more dense “meaty” texture. That might give this recipe a little bit extra!

You could also make a pumpkin katsu instead of a tofu one. In England, Wasabi makes theirs with pumpkin katsu and in my opinion it tastes even better than tofu!

Joining to the replies of "you should try adding apple" next time you try it ^^ and/or carrots. As a less healthy version you can also add potatoes (in chunks, not blended) that also helps thicken up the curry and makes it more filling for very little money.

For those of us who can’t stand coconut milk in their curries do you recommend at least adding some kind of plant milk for a thinker creamier texture like maybe soy milk?

Yes, I would add some type of plant milk. Maybe unsweetened soy since it has a bit more fat than other milks. It will taste different but I'm sure it will still be good!
