for people who find it difficult to make bhakris, here is an easy procedure. In Karnataka its eaten in the form of steamed balls called Mudde. take the millet flour add just a pinch of salt and add hot water. bring it all together and knead it. Roll it into small lemon sized balls and place it in a steamer and steam for 10-15 mins. this tastes delicious with dal, Sambar or Usal - (sprouts curry). Another easy way is to add a tablespoon of millet flour to a cup of boiling water and cook it like soup on a low flame. when it comes to a soup like consistency take it down and let it cool completely. now add buttermilk in this and churn it properly for 5 mins to blend well add some roasted jeera powder, hing and black salt and drink it like buttermilk. or during winters and rainy season when you want to drink something hot, use the same soup and add hot milk, some honey or jaggery and some powdered dry fruits, blend well and drink it. both ways it tastes delicious. This is very good for people who want to lose weight or are diabetic, as 1 glass of this buttermilk or hot milk version 1 hr before lunch or dinner will automatically make you less hungry and you will end up eating less. sometimes my dinner is just one or 2 glass of millet buttermilk. im good till next day.

Here in Karnataka, we get many millets, I make it in the form of rice , upama, dosa from little millets , barnyard millets , brown top , kodo and many. You have to soak it for 5, 6 hours then cook it , I am enjoying it .

I make bajra kheer or Rabdi with, My mum's traditional recipe of urad flour, bajra flour roasted in ghee, then adding a bit of Asario (alvi seeds), dried chestnut powder, and almond powder and melon seeds either 4types of melon or 7types. Depending on availability. Roast everything in ghee, add milk and make Rabdi. Have whole winter and you will do great. Whenever I feel weak. This is what I have.

But oh my, this whole winter I had been eating multigrain bhakari, feeling proud to introduce it in our meal as healthy, full of nutritious food. Although, a month back I discovered dhebra, a delicious Gujarati thepla of bajra, is another recipe we have been consuming fondly this winter. @@nitaprajapati46 Just like atte ka laddoo... you'll find many recipe online... Roast bajra in ghee. Fry gond/edible gum in ghee, then grind/pulse it few times, roast dry fruits, fix everything with jaggery (slightly liquified) Generally stays fresh for 15 days...it tastes really good.... n gond just adds a nice crunch to it

Bajra is eaten throughout the year in western region as breakfast with curd in the morning and with chhach and chutney as dinner. Gujarat and Rajasthan bajra i stored for the whole year to consume round the year because of its high nutrition food values.

You will get dahi after 15 or 16 hours, you have to keep the pot in little warm water and keep in the oven or microwave so that it will prevent from cold air . Here in Mysuru I am doing it .or cover it with woollen blanket.

no its not. both are completely different grains. although both are very healthy. quinoa is not native to India whereas millets are far more common. common Indian millets like, bajra, jowar, Ragi, Kang, Varai are very easily available in local grocery stores.
