Creamy Chicken Corn Noodle Soup
6 cups chicken broth
2-3 cups shredded cooked chicken
2 Tbsp olive oil
1 medium onion
3 medium carrots
2 medium celery stalks
2- 3 cups cooked noodles
1 can sweet corn
1 cup heavy cream
Salt and Pepper to taste
1/2 tsp thyme
1 tsp poultry seasoning
White Chicken Enchiladas
2 cups shredded, cooked chicken
2 cups shredded Monterey Jack cheese
Salt, pepper, cumin, paprika to taste
10 flour tortillas
3 Tablespoons butter
3 Tablespoons all-purpose flour
2 cups chicken broth
1 cup sour cream or 1 8oz block cream cheese
8 oz salsa of choice
combine chicken mixture, prepare sauce, assemble and bake at 375 for 20-25 minutes.
BBQ Chicken Pizza

Add desired toppings, I used BBQ sauce, shredded chicken, red onion, chives, bacon and a variety of cheddar cheeses
Bake at 450 for 12-15 minutes

Another wonderful video! I’m 67 years old and cooked for my farmers for 40 years… I wish I had been so creative! I never wasted, but meat and potatoes and a veggie were on the table every day! This was all before KZbin and the joy of sharing lifestyles and recipes! One thing I can say for sure, the guys were never late for dinner. (lunch to most) That says it best! Remembering their low voices and murmurs of farm talk, are things I miss most. They’re all angels now, plowing the fields in heaven…I miss them every day! They're not organic, but I always buy 2 rotisserie chickens when I do my weekly Costco grocery shop. We're low carb, so I'll make buffalo chicken dip, Zesty chicken queso soup, cheesy chicken bake, low carb chicken pizzas, and the rest we use for salads! I boil up the carcasses for broth ❤

With just the two of us again, I often buy a Costco rotisserie chicken and stretch it for three or four meals. And I boil the carcasses for broth and/or soup.

I usually only buy roast chicken and skinless boneless chicken. I always cook a roast chicken for meal 1, then boil the remainder and bones until it all falls apart. Then I make chicken pot pies. I usually make 2 and freeze one. Then, the remainer makes chicken quesadillas, or a stir fry, or a chicken soup. I have a family of 5 at home, and we need to save wherever possible. This is why I love your videos, and I am incorporating some of your recipes and ideas. We just purchased a 10-acre property 4 months ago, and I am excited to start having it provide for us.

When my three kids were home, this is how I usually fixed chicken. I never wasted anything. They’re grown and gone, but I still never waste anything! I’m 69 and a retired elementary school teacher, so I’m enjoying cooking from scratch again for the two of us.

This is why I can a lot of chicken. I usually bake or poach several chickens at the same time, divide them as you do and split into pints or quarts, I hot pack them in broth, and pressure can them. I cook for 5 adults, so we go through a lot more meat than you do, but this way I also get more than one meal out of a chicken. I usually save carcasses until I have enough to fill my 40 quarts broth pot. It’s a bear brewing pot, that has a spigot at the bottom. I let it all simmer for 48 hours. The spigot means that I don’t have to strain the broth or remove top fat, since I drain the pot through the spigot I end up with fat and bones in the bottom of the pot. Once I have drained off the broth, I freeze dry the leftover bits of meat, bones and vegetables. Then I grind it up and spread it out in our garden or add it to compost. Free bonemeal and a way to use these last few parts of the chicken. If the bones are still too tough for grinding, I just put them in my instapot for an hour with a little water.

I love white enchiladas. If you haven't already, add some green chilis to the sauce. I buy mild ones because I have kiddos. You can also make them lasagna style which super easy on a weekend night.

Love your ideas. An idea for you, I hosted a virtual pampered chef party, it was awesome. My friends attended from the comfort of their home and ordered online. From that one party I got so many items and discounts to get a few big items I always wanted. You could get a pizza stone. ❤

I’m gonna try the enchiladas this way. I usually mix the cream cheese and rice with the chicken and add salsa verde. Then I top with more salsa verde and cheese. This would be a nice alternative.

I would like to see you portion out the chicken. I bought poultry sheers to spatchcock after watching you do it. I’m a proficient homesteader and we just finished up 5 days from the same bird but I cooked it and then shredded it. I’m never too old to learn something new and piecing it out first would be great to know!

I use these noodles all the time. If you can't find Kluski, just scope out the egg noodle section of your pasta aisle. You can find them super thin up to wider than fettuccine!

I'm enjoying ground chicken tacos that I got from removing the meat from a whole chicken and chopping it up in the food processor. Ground chicken is so expensive otherwise.

I would like to see you cut up a chicken. I buy two whole chickens every 6 weeks or so and cut them into individual portions. I use the backs, necks and wings to make broth. So I get quite a few meals out of two chickens. Walmart has a great deal on two name brand chickens in a package. I would love to see how you do it as I am far from perfect.

This is how I have cooked all of my life! I stretch my chicken a little more than you do, by adding in less chicken in most dishes or dishes that you don’t have to use as much chicken. When you cook the bones again for your second go round, after draining the broth pick through everything and you will find enough chicken pieces( very small), to make some homemade potstickers. I buy wonton wrappers to make mine out of. Just make a teriyaki sauce with some diced chives or green onions…as your dipping sauce and as a little to marinade the tiny pieces of chicken in. Drain the chicken well then place about a teaspoon on each wrapper. Do not overfill. Then seal with a wet finger on outer edges of wrappers. Shallow fry them in tiny bit of oil, then drain off any oil remaining and add a small amount of water in pan to steam them. Serve with dipping sauce. These can be served with egg rolls, or use them in an egg drop soup. Also can be served along with a Chinese Corn soup or doctored up Ramen soup. Make some almond cookies for dessert and you have a complete meal. 😊

I must have missed a bunny update somewhere! Maybe while I was out of state tending to my dad... did I hear bunnies as in plural? Rosie got a friend! And did they come inside for the winter or on a more permanent basis? I saw the best meme... I have realized that my floors will never be clean because of the choices I have made (and then it shows 2 bunnies under the word "choices") and I thought "Accurate". 😅 We raise meat birds too but since I never cooked whole birds prior to that, we just part them out before freezing on the day after butcher day. That said, I'd love to see your technique because it takes us til we're half way through before we get into a groove and stop "butchering" the meat. Now, I end up cooking most of the thighs as meals, but before we even freeze the legs I cook them in batches in the instant pot while we're still parting out the birds. I can fit around 12 in one batch depending on size. That meat gets pulled from the bone and packaged plain in 1.5 lb bags. Then when the legs are done I do the same thing with a bunch of the breasts (though not all), maybe like 2 batches of 9. That meat gets shredded and frozen in 1.5 lb bags. And then anytime I need a fast meal I can thaw the precooked chicken for sliders, pasta, pizza, casseroles, quesadillas, tacos, burritos, soup... you name it! And I prefer to freeze it plain so it is more versatile later. I do the same thing with beef and pork roasts, though we don't raise those ourselves. I wish I could batch cook up a year's worth of those precooked meat packs to have on hand just in case something ever happened to me, at least I know my husband and 22 yo son would have dinners that they wouldn't have to think too hard about. The only other precooked freezer meals I do are meatloaves (flash frozen in slices that thaw quickly) and breakfast burritos. That said, I will pre-slice some raw meats to make meals faster to pull together later, like cutting flank steaks into strips for fajitas or stirfry, and pork tenderloins into medallions that cook up in 8-10 mins. I'd love a video of things you do (aside from canning) to create easy to assemble meals. I'm always looking for tricks for fast meals, yet I am not a fan of spending a day making freezer meals. I can some things, but didn't love the texture of meats or most veggies. That said, I got a deal on russet potatoes the other day and plan to follow a dry canning recipe originally from Canning Diva and followed by Carter @ Grow and Preserve. I haven't rebel canned before but I am comfortable with this one. Now just to find the time!!!

Everything looks so good! I am making bean and cheese enchiladas for lunch today! And yes, those are the best noodles. About not having a pizza stone; have you tried baking your pizza in a preheated cast iron skillet? It really does work fantastic. I have cracked 2 stones. I love being able to also do my pizza on the grill (in the skillets) over the summer so I don't heat up the house. Just preheat the skillets at 450° for about 15 minutes before you add your dough. Give the dough about 5-8 min in the oven (don't brown) before you sauce and top your pizza. Bake it for about 10 min until it looks the way you want it. After using the skillets for pizza I did finally invest in a cast iron pizza pan and have never looked back. Have a blessed day! ❤

I often roast a whole chicken for multiple meals. To not have a dry bird, I cut up apples and sometimes a orange to moisten the meat. Stuff the bird with the apples and if using a orange, with the skin or peel still on. Sit the bird on top of slices or even the cores of the apples to get it off the bottom of the pan. I'll add chicken broth or apple juice to the bottom of the pan for moisture. Then season and cover with oil as usual. The heat causes the fruit to expel its moisture and adds a bit of extra flavor to the bird. Remove the cut up fruit before serving or slicing. My very picky mother-in-law will only eat breast meat and only if it's moist. She loves my roast chicken. I ll do the same for turkey to remove any "gamey" taste from the dark meat. After the first meal of Roast chicken I'll remove the meat and make soup as you have. The meat will go into Tetrazzini, Chicken and broccoli, and any number of casseroles as well as Tacos etc. Chicken is so versatile!

When I cook a whole chicken like this I cook it "airline style" which is a fancy way to say remove the wings, to save them for a wing night.

Enjoyed the video. You like to check todays video from 'Farmers Wife Homestead' She's in New Zealand and she did a very fast pizza crust and she doesn't have a pizza stone and she uses Parchment paper on the oven rack and her pizzas turned out great looking.

how do you save your broth? just putting them into jars or do you water bath them? i have a hard time wasting, i hate to but i don’t want to be storing the broth incorrectly and make us sick 🙂

If we are consuming within a week they go in jars straight into the fridge. If they are not going to get eaten soon they will either get frozen in mason jars allowing room for expansion or pressure canned according to the ball book guidelines ☺️

I tried redmond’s but maybe I got a weird batch because it was like eating sand and tiny rocks? It also left sediment in the bottom of anything I made with it. Have you experienced this in any of the batches you’ve used?

Oh my! Did you purchase the coarse stuff? I always buy the ultra fine and can’t say I’ve ever had that happen. It also dissolves in water very easily for me, it will make it cloudy because of the minerals in it but I’ve never had sediment! Their customer service is great! Perhaps worth an email for replacement!

It always amazes me when people roast or poach the bird and do not make stock. Just throw out all the goodness to make without making the most value out of the effort.
