I did not know this about the rind of a water melon. Sadly, I’ve had a recipe for almost twenty years for water melon rind, and never used it. Today you can go on the internet for more info preparing it.

I keep canned pumpkin 🎃 purée and often add it to my Fage 0% Greek yogurt along with stevia and pumpkin pie spice. Sometimes, I add a little coconut cream. Yum!

My grandma, who lived through the Great Depression, didn't believe in wasting anything if it could be avoided. She and grandpa had a huge garden and every time we picked a watermelon she would save the rinds and pickle them. They were delicious! She also cut up cucumbers and onions, covered them with a half water/half vinegar solution and left them in the fridge for a week. Once the cuke season was on she did this every day so we always had a small bowl for the table. When pumpkin isn't in season, warm up canned pumpkin on the stove, add cinnamon, nutmeg, or cloves and butter, then serve it in place of mashed potatoes. Squash can also be baked, scraped out of its shell, mashed, and served like mashed potatoes. Add butter, salt & pepper, and it's yum!

I just want to say that I appreciate your channel. I was following the basic food Pyramid and I couldn't figure out why. I was dealing with hypertension and all sorts of elements..... It was to the point where I was starting to have reproductive issues. After finding your channel. I did switch to low carb Mediterranean as I am North African and I eat a lot of vegetables. I think raw, it's a "just don't eat too much of it at once" kinda thing... At least that's what they told us as kids at the watermelon 🍉 feeds(school festivities) . In the south, it is pickled /canned as a sweet condiment relish /pickle

It is only bad if you blend it. The natural fiber of watermelon will release the sucrose at a rate that will not spike insulin.

thank you so much doctor.. many years ago.. my doctor told me I had CAD... lots of people had it kind of like no big deal... look it up on the internet.. I'm 63 but I have always heard people say hardening of the arteries.. and if he would have told me that I would have been much more on the ball about eating better.. Some stores do sell it over winter but it’s always going to be the seedless variety. If only seeded non GMO watermelon was around during winter.
