These mini coconut bakes, filled with a quick and easy fried sausage, are a personalized twist on a classic Trini breakfast item!
Coconut Bake with sausage is an ubiquitous breakfast item in Trinidad & Tobago. Despite being widely popular, it is seldom mentioned in Trini breakfast conversations. Fried sausage is another popular item that is typically made with hotdog franks or vienna sausages.
For this recipe I used chicken salami that's sautéed with onions and peppers in a ketchup and soy sauce mixture to create a quick and delicious filling for our mini coconut bakes.

This man is obsessed with soy sauce 😂😂😂 Mommy used to have us burst the coconut outside (pieces would scatter). Now I put it in a plastic bag and burst it right on the kitchen floor 🤣🤣 pieces stay right there in the bag. Gonna try making coconut bake hops. I always turn to here for inspiration. Thanks Baidawi.

Good morning, overproofing can occur and that can cause the bakes to not expand while baking. They will also begin to ferment so the taste will change
