Whether its watching the bands cross the stage at home with family and friends or preparing a pot to go lime with the crew in Panorama, Pelau always has a way of finding itself right in the heart of Carnival activities. Perhaps that is due to the fact that a lot of Trinis consider this the national dish of Trinidad & Tobago.
Would you agree with that statement? Comment below and let us know.

Spoons are for soup. Eating regular foods with a spoon is so odd to me😳 I went to a wedding in Trinidad 10 years ago & they gave me a spoon, OMG I was soooo lost😰, where is the knife & fork??

Yahkee is the black American version of pronouncing "Yan-gey" native American; version of "Juan-guy " which is a "Frenchman", just as "John-doe" is an Englishman. "Juanguy pepper" is a quebecois and is translated as "a hothead Frenchman" from Quebec.

@@shonicareyes9845 because pumpkin, carrots, pimento, and corn are easily cooked its better to add these ingredients 15- 20 mins before finished pelau. Don't want ingredients to completely dissolve.

Hi Renee, I've only recently found your shows on KZbin and I am very impressed. I know how to do most of what I've seen you cook already but with some personal variations as expected. I normally put pigtail, smoked bones, chicken and pork for a juicier more fragrant pelau... lots of green seasoning and pimentos. I usually eat immediately as I turn off the pot with a generous dollop of pepper sauce on the pelau. Thank you for your recipe! Looking forward to viewing more of your work!

That looks so good. Never knew about the foil trick, always wondered how others got it less "wet" so I will try it next time. I must say that I brown my sugar without oil in all my stews and it comes out really really well. It's a great way to avoid the extra fat since most meats and coconut milk will already have a bit of oil. Thank you so much for sharing all your great recipes! 😊💛

Renee, I don't use oil to make my browning, or caramel at all. My daughter is afraid of making it, so I usually do it for her in advance, and pour it into a bottle; she takes it home, and whenever she's making cake, or pelau, or anything that needs browning, it comes in handy! My Chicken pelau is similar to yours, but I add one, 6-star Anise, some diced carrots, and green and red bell peppers; it doesn't only taste nice, but also looks nice!
