Katherine got a sort of recipe book that her grandmother put together in the 1940s and 50s. It was fascinating enough that I decided we should cook some of this REALLY WEIRD STUFF!

+Leila54 - Oh man, that's only the beginning. They went nuts with those Jello molds back in the day. I've seen a recipe for a "salad" that had peppers, celery, pineapple and cheese set in Jello. It's the cheese addition in particular that makes me throw up in my mouth a little. D:

We were served a dish at my parent's house - brought by another guest - which was blackberry Jello, chopped walnuts and green OLIVES (WTF!?). I'm telling you, when you expect a green grape and get a green olive in your Jello, it's not a pleasant experience. I asked my dad what he thought of the dish. He said "Oh it's her specialty, she brings it to lots of dinner parties and everyone always asks for the recipe." I said, "Sure they do, they need it to show to the doctors in the ER!"

The trick is to not cross the streams by adding veg--my family has an orange Jell-O with crushed pineapple recipe that's super-delicious. And cherry/raspberry Jell-O with cranberry sauce and nuts isn't at all bad, if you leave out the celery that's traditionally called for.

The watery texture of the jello was probably from the oranges - a "food chopper" from the '50s would not have been nearly as aggressive as a modern food processor. You turned the oranges into juice; dicing would have been more what was intended.

Yes, what they mean by a food chopped is most likely a jar with four blades in the top that you mash down by hand. It does a very course chop. I have had the dish and it isn't bad.

@@blackcat1642 Idk if that's true for all couples, though, bc my parents have been married for over 22 years, and they look a lot different. My mom likes to wear bright colors like oranges and pinks and light blues, but my dad is more of a dark blue/green/black and sometimes plaid or stripes type of guy. And they have different glasses. My mom used to wear contacts, but now she wears glasses with thick plastic frames, and my dad wears wire-rims. I can recall when I was little, my mom wore dark colors more often, but now she wears lots of colors.

In all fairness, a LOT of the food products have changed since the 50's. They now skimp, add too much salt, etc., etc.

For the last several months I have been marathoning all of Vlogbrothers from the very beginning. This video is a particularly important stop on my journey because it was the first Vlogbrothers video I ever watched. I was amused by Hank so I decided to subscribe and was sucked into the wonderful world of Nerdfighteria. Since then I've participated in the Project for Awesome, plan two separate fundraisers for the Foundation to Decrease World Suck, become and avid fan of Dear Hank and John and AFC Wimbledon and been accepted to my top college with an essay on Nerdfighteria. Hank and John have completely transformed my life and it all began here with this video. DFTBA.

I honestly adored this video. I feel like it was a great way to incorporate what so many KZbin accounts do just to get views (like eating weird food) with what the vlogbrothers do, which I feel is teaching you about something. No, I didn't necessarily learn about current world suck in this video, but I never would have connected the idea of "butter, when possible" to the rations during WWII, and I certainly wouldn't have guessed that these were common at a time that doesn't necessarily seem that long ago. Thank you for a highly entertaining but still education video, Katherine and Hank.

These strike me as recipes that feature Depression-era frugality with a touch of the wider variety of groceries and fresh produce that became available after World War Two. Jello was BIG in the 1950s and '60s. Never could figure out why, other than price per serving.

Gelatin molds used to be the stuff of high society before Jell-O was invented. (It took the better part of a day to make it, what with having to boil down bones to get the gelatin base, so it was only served by those who could afford servants to make it.) Jell-O made 'designer' desserts available to the masses, and while it was cheap, it could also be upgraded easily for fancy occasions, thus making it a bit of a housewife-y art form. But it wasn't just the 50's and 60's--Jell-O's been popular since the start of the 20th century, and judging from the fact that they keep bringing out new flavors, still is popular today, even if the Jell-O mold/salad isn't.

I know someone who loves jello. She adored it. For her she likes the texture. Doesn't really care what it taste like so long as it wiggles and she can slurp it up. The second you put anything in it she looks so disappointed.

Bringing gelatin (to step away from trademark considerations and address the _real_ issue), as I was saying, before I interrupted myself, bringing gelatin salads into the discussion introduces a higher plane of substance transmutation, not unlike what happens to water when one adds browned bits of beef chuck, various vegetables, herbs and spices, some beef broth, and a dash of burgundy. I mean, who, among adults, doesn't like shredded carrots in lime-flavored gelatin or the little marshmallows in cherry-flavored gelatin? Some gelatin salads would even promote the squiggly chunks from the dessert plate to the dinner plate --- a promotion at least for those among us those who don't *Eat Dessert First!* I will also grant the unique experience of gelatin's texture. It is, after all, a slurp-able solid. Beyond that, if retained briefly in the mouth, and perhaps swished around a bit, it presents a melts-in-the-mouth flavor enhancement that makes one wonder why you just didn't drink it down before it fully solidified in the fridge. Think about it: all that trouble and time in preparing the gelatin according to the directions on the box, and it actually _reduces_ the flavor. Go figure. I mean, if it's about texture, one could just eat tofu. (Hmm. Maybe a tofu gelatin salad?)

Remember that in the 40s and 50s, the soups would have had totally different flavours due to far more salt and probably dozens of now-banned additives. Or maybe the collected recipes were "ones to avoid at all costs in the future"...

I have, somewhere, a whole book of gelatine based dishes from the late 50s or early 60s. Savoury. Sweet. Appetiser. Main. Cover to cover food made using gelatine and moulds. So many. So awful.

There is no instruction to season in any of these recipes. Was it understood at the time that you needed to use your salt and pepper to taste, or did people really enjoy food this bland?

Definitely something you were expected to know. I think the dishes would have been a lot better if they had been made by someone with 1950s cooking skills. You can tell by the way the jello dish turned out it was either messed up on purpose for the video or Hank really needs to take some cooking lessons.

+Paul Ewing Actually I think it was the modern food processor that did that one in. Speaking as someone who grew up with 50s kitchen equipment (despite being born much later), I can guarantee you the chopping wouldn't have been that....enthusiastic. You're absolutely right about the seasoning though: it's kinda like how a lot of old baking recipes just list the ingredients: it's expected that you'll know what to do with them.

+cyanmanta I was just reading an article in Better Homes and Gardens about the history of their "test kitchen." It said that one of the goals was to overhaul the way recipes were written because they were often unclear and "assumed that all cooks knew how to make a piecrust or even how long something need to cook." Reading these recipes in Katherine's ledger you can really tell there was no "standard" way to write a recipe. Some of those were really wordy while that Golden Rabbit one was just like "heat, stirring."

They had the belief that foods could alter people's temperaments. So you eat spice you become loud and aggressive and dangerous too. So if you ate bland foods you'd be more level headed, reliable and not obsessed with sex etc.

I wonder how slight differences in the quality of ingredients back then might effect the recipes. The ways we farm and process food has changed a lot after all. Even something as simple as milk was different when my Grandmother was young.

+R Dreher Nah, my grandma is 84 and says the milk now tastes better than the raw milk she had when she was in her 20s. Same with canned soups, she said the campbells tomato soup from the 1950s taste worse than it does now too, extremely bland, and tasted like metal.

+rdizzy1 I work at a grocery store that is pre-dominantly frequented by senior citizens. There is an ovwrwhelming majority that say the opposite of what you just said. They say milk back then was 10x better. Soups, meat, you name it they say now a days it tastes waay worse. Although, as far as pre-made things like certain frozen foods etc. was not available back then. They also talk about the cost of things compared to now. Overall they say the quality of most things are significantly reduced compared to "back in the day." I don't mean to come across as arguementive, but I find it hard to believe that fresh milk off a farm or fresh eggs from a farm (cheese etc.) is anywhere near as good quality as store bought goods. I actually live in a pretty rural area and let me tell you I will travel hours for some farm fresh cheese, milk, meat, etc. when I got the extra income. Not saying this video is inaccurate, but there are some things you just can't beat in terms of quality. There are some things I'm sure have improved though. Anyways, my 2 cents.

+rdizzy1 I've been drinking raw milk from Jersey cows for a few years. It tastes way better than any milk you can get from a store. Not to mention its loaded with vitamins and minerals and I have never felt better. Pasteurization and homogenization kills beneficial nutrients and makes the milk (if you still call it that) unhealthy. If the milk is gathered properly, there is no risk, only benefits, lots of benefits. Your gut flora will thank you.

+R Dreher The packages are a lot smaller today so they won't come out the same. Back in the 80s Campbell's soup shrunk but cans of green beans hadn't. Nobody could make green bean casserole right until the bean cans shrunk too.

This was an ADORABLE video! My mom also had a cook book like that, and it was lost in time. But she had a recipe for 'Swiss Steak' that was some kind of steak and cream of mushroom soup and other things that I don't know what... and I loved it as a kid. I could smell it Sunday morning when I woke up and I knew that it was going to be a good day. Sadly, that recipe is lost and no matter where I've searched or family members I've contacted, I've never been able to duplicate it. Thank you for sharing these recipe's!!! Liked AND subscribed!

I always put graded cheddar cheese and use milk in my tomato soup. Probably my favorite childhood meal. That and apples with peanut butter.

i really liked this video. i actually have watched it a few times. i think it reminds me of the old style of vlogbrothers videos where you guys did adventure-type things like this and had more fun. of course i still enjoy the new explain-difficult-things type videos and such but this was sort of nostalgic to me. two thumbs up :D

It's a pity there aren't preserved foodstuffs somewhere that you could have made this with ingredients of the time. I wonder how differently Campbell's soup of today tastes compared to that of the '50s.

+David Harris I remember many foods tasting better when I was a kid in the 60s. Cambell's Chicken Noodle was one. Over the years many companies have used cheaper ingredients. Twinkies taste like crap now and so do Pop-Tarts.

It's probably treated with heat. I think it's called pasteurisation in English, it involves heating the milk or something and that somehow makes it keep longer fresh. We have five packets of milk on the top of our storage units and they keep for ages ( well we use them before they spoil, but some stay there for over a month). We only put them in the fridge when opened

I never knew popovers were weird. My mom makes them whenever we have people over for brunch, so I've had them quite a few times. That jello looks disgusting though.

They're the same thing. In America pudding means something different, so we call them popovers. We usually serve them was th au jus. It's considered fancy and Frenchish.

David Harris Well, over here Yorkies are usually made of batter mixture, and appear in a traditional English Sunday roast. They are mostly for gravy, though toad-int'-hole is essentially a large Yorkshire pudding with sausage inside. I should know, I'm in Yorkshire!

Most of the recipes from newspapers and magazines were designed to sell certain foods. During the 70s Kraft sponcered several shows. And they would show recipes from the Kraft Kitchen. Most sounded horrible. But there were a few gems.
