I recently learned of food sensitivities I never knew I had and it's been challenging to find substitutes. I now cook for my family and then make myself something different since they aren't willing to go down that rabbit hole with me. I really appreciate the experimenting you guys have done to provide ideas to save me from having to eat packing peanuts for the rest of my life ❤️

Whole food plant based for 2 years now. I find that Farro has a mouth feel of having butter or oil without the oil. It is a beautiful tasting grain. I use it in bowls with mushrooms, greens and a little homemade hummus. It is really good.

Cheese was hard being from the Midwest but I moved to South Korea (which doesn't produce but only imports cheese so it was super expensive) and found I could live without. In America again now but I love a simple, clean, stretchy mozzarella I use on pizza or lasagna. Uses just cashews, water, acv, lemon juice, salt, and tapioca starch. It is so good and allows me to mostly avoid the processed vegan cheeses now.

Great video. In My favorite kale salad I massage the chopped kale with avocado and lemon juice, if it’s for the base of a bowl I use sauerkraut with the avocado. Delicious

Almost anything can be veganized but can I make a confession? I've been vegan since 1990 but I have to say that I miss cottage cheese. I know it's not the healthiest but I'd love to find a delicious vegan version. I've tried making it myself- and I know that there are no commercial options out there. The problem with me is that I want it to taste EXACTLY as I remember it. I won't die it I never eat again but just had to make that confession. 😁

I'm in Europe and there are vegan soft cheeses available. Violife I believe it's called. The closest thing to cheese and they have different types. Soft cheeses too!

Me either. Nice way to not waste plastic baggies. My friend stores them in the freezer in the peel. I tried that once and I did not like it. She said pop them in micro 15 secs and the pop right out of the peel! 🤗💜🍌

Great information ☺️ Have you guys tried the Free to eat brand of pastas? They have great lentil combo ones, butternut squash combo ones, cauliflower, kale etc... usually just three ingredients. What brand of nutritional yeast do you use?

Great Video and fun ideas.! I went mostly vegan several years ago for my health.. I am unable do any Soy products. Soy doesn't work well for my body, I am also gluten free because of a severe sensitivity. Any ideas for someone who can't do Soy?

He’s always harping on the dangers of plant lectins. I don’t know about you guys but I don’t by it. He always has something to sell too. Any thoughts on this?

Did you have any digestive issues during the beginning of your transition? I notice it is something no one will discuss or will just make a blanket statement about it. I tend to freak out over the slightest stomach issue so I am trying to find some honesty in a vegan whole foods transition.

I already had digestive issues daily which were basically helped by going plant based. The one thing which tends to be common is that when you transition into eating more beans/chickpeas and a plant based diet as a whole, you naturally consume far more fibre than before. As a result you may experience bloating/gas until your gut gets used to it. One tip is cooking beans with 2/3 cloves of garlic but also start with small portions of beans to let your gut adjust. Oh and water, lots of water. I hope this helps!!

I LOVE beans. They just make me so gassy even if I've soaked and rinsed them overnight.

Introduce beans slowly ( even one teaspoon a day). Your body needs time to grow gut bacteria that is able to digest it. You should see a big improvement after 2 weeks and no gassiness after 6 weeks if you stick with it.
