This eggplant lasagna recipe replaces pasta noodles for thinly sliced eggplant. It is completed with a delicious meat and tomato sauce. This takes a little work but it is well worth it. It is delicious.

Serves six
1 large eggplant - sliced lengthwise into thin layers (about the thickness of lasagna sheets)
1/2 pound (250 grams) of ground beef
2 TBS olive oil
1 cup finely chopped white onion (1/2 a large onion)
4 garlic cloves - minced
1/4 cup of chopped bell pepper
2 TBS grated carrots
1 - 28 oz. (794 grams) can of finely chopped or crushed tomatoes
1 TBS dried oregano
3 TBS chopped fresh basil leaves
1/2 cup of shredded Mozzarella cheese
1/2 cup shredded Parmesan cheese
Salt & Pepper
Layer the eggplant slices into a colander and salt each layer. Sit the colander in the sink and allow the eggplant to release its liquid.
Heat 1/2 a TBS of olive oil in a skillet and add the beef. Add salt and pepper to the meat and mix. Cook until the beef is browned. Once it is browned drain in a colander inside a bowl to get rid of the excess rendered fat. Wipe down the skillet as you will need it to brown the eggplant.
Heat 1 TBS of oil in a pot and add the onion. Cook for 5 to 6 minutes until it softens and starts to lightly brown. Add the garlic and bell pepper and cook for a couple of minutes. Add the grated carrots and mix. Return the ground beef to the pot and mix. Add the tomatoes, some salt & pepper and the oregano and mix well. Bring the tomato sauce to a boil, cover the pot, lower the heat and simmer for about 20 minutes.
Heat your oven to 350 degrees F (175 F).
Add the remaining oil to the skillet and heat. Discard all the juice that the eggplant rendered and start browning it. Lightly brown one side and flip to brown the other - you really only want to soften the eggplant and make pliable - and remove it to a paper towel lined dish.
Start assembling the lasagna in a 9x9.5 inch casserole dish. You can use a 9x13 but will need to adjust your ingredients a bit.
Place a layer of 1/3rd of the meat sauce on the bottom of the pan and top with some chopped basil leaves and some shredded Mozzarella and Parmesan cheese. Place half of the eggplant on top. Repeat the process - 1/3rd of meat sauce, basil, cheeses and eggplant. Top it with the rest of the meat sauce, basil and the two cheeses.
Place the lasagna in the oven and bake for about 30 minutes or until the sauce is bubbly and the cheese has melted.
Remove from oven and allow sitting for about 10 minutes before you slice and serve,

I love eggplant lasagna! Your recipe is a little more waistline friendly, with mine I sliced the eggplant in thin rounds, salted them, patted them dry floured and egg washed them, breaded and fried the eggplant, then basically what you did but instead of ground beef I used sausage, I love your red sauce recipe simple and easy always lot that combo.... thanks enjoyed your love of food and sharing....

My dear, Mary Ann, I really appreciate this one. Since my diagnosis of Type 2 diabetes I have had to severely limit my carbohydrate intake. I have many jars of my homemade spaghetti sauce that I pressure canned a while back. I have been thinking about what to do with it now that pasta is out. This is the perfect use for it. JODY CRAWFORD - Jody, I'm assuming you saw Mary Ann's vegan version of this down in her reply to Madelyn5454, right? :) I can hardly wait to make this for myself! Vegan version! I think meat often wrecks the more delicate, subtle flavors of other foods.

Want to give a big thanks for this incredible recipe. First time I've cooked something more serious for a date night yesterday and it has been amazing! (still have some yesterday's lasagna left right now) Unfortunately I've added a little too much water (the tomato cans had plenty) and the dish wasn't as stiff but it didn't matter at all. Love you!

Madelyn5454 Hi Madelyn! I actually made this with some friends last week and we replaced the meat with mushrooms. I also added a layer of ricotta cheese mixed with garlic powder, egg, Parmesan cheese and black pepper. It was very good. So maybe that works for you! Thanks for watching!

Maryann, you've done it again! This recipe looks fabulous and I don't even like eggplant. Well, I can't honestly say that but I never thought I would so in 59 yrs I've never even tried it. I think that's going to change in a few days after I go shopping for groceries, lol. I'll try it, in honor of you and your hard work in putting out these mouthwatering recipes. Question though, I saw seeds in there on the eggplant, is that normal and obviously you eat them right along with the rest of it, is that how it's done then? I have no idea, no one in my family growing up ever made or ate it so I've never actually seen the inside of one. I guess I'm getting adventurous in my old age, lol. But I just can't stand watching you make these fabulous things and not want to try it! I'll let you know how it turns out! Thank again, dear lady!

***** I hear ya on that one. Maryann makes everything look sooooo good, it getting to where I can't watch her videos without something to snack on at the same time because she makes me sooo hungry! And the chance to see her beautiful views from Vanuatu out her windows in the background is simply breathtaking as well. Teri Ruiz Teri! Thank you for your message! The truth is I started eating eggplant in my fifties as well. Like you I always had this preconception of. . . . well . . . yeah. Anyway, I finally decided to try it and it is one of my favorite vegetables. I love it. We were flying back home a few days ago and we stopped at a Chinese restaurant for lunch. I ordered an eggplant dish which regretfully I did not retain the name of (late fifties perils) but I will definitely try and replicate it. It was fantastic. The seeds are fine. You will never know they are there. Thank you so very much for all your support! I really appreciate it! Let me know if you make this and if you like it.

The Frugal Chef Ok, so I finally got off my butt and made this but didn't end up having all the ingredients to do the exact recipe. Soooo, I made the eggplant, the mozzarella cheese, some muenster cheese, some egg, some italian spices, minced shallots, minced garlic, minced onions, sliced yellow and green zucchini, sliced tomatoes, and of course some spaghetti sauce, along with salt and pepper, and a splash of extra virgin olive oil. I put it in a 13x9 baker and covered it with foil. Baked it at 375 for 45 mins and I came out fairly good. The eggplant could have used probably a bit more time in the oven but I've got to say it wasn't bad at all! If I wasn't paying attention to what I was eating, my brain thought it was normal veggie lasagna with pasta noodles, not eggplant instead of noodles! All in all, I think I'll make this again, but with the full ingredients this time, lol. I think you've just turned me onto eggplant, Maryann! Guess I'll have to get some seeds of that now and add that to my garden, lol! Thank you again, dear sweet lady!

Lisa Mbarak Hi Lisa! The truth is I am always thinking about food. I am almost 60 and have decided that I will never be thin beacuse of this! Ha ha ha! I love to eat and love to cook. Anyway, I always ask people what they love, I search and see what people are looking for on the internet, I get invited to other people's houses for lunch or dinner and I check out every single cooking magazine I can get my hands on for ideas. ***** In the fruit area or dairy section of a grocery store. The health food store has plenty of brands also. If you are in a country or area that does not sell it at the store, then look online for veggie beef bits made from soy that you add water to, and they are excellent. I just sent for a shipment of my favorite soy bacon bits, which are smoked soy bits and I use it for the extra touch when I feed my not veggie friends., and I eat it as candy dry.

The Frugal Chef Maryann it was beyond delicious! I did one thing differently and that was the eggplant which I sliced super thin and baked it, and then turned the slices over. Sneaky me, told the husband that it was a new grain, and he ate it. Honestly, it was an excellent eggplant (i taste it raw first) and it looked like and tasted like noodles. Regards 0-)
