No joke, these were the best meatless meatballs I've ever had. I had them with marinara first, and then with BBQ sauce and mashed potatoes. Both were absolutely delicious! Next time, I'm gonna make burgers out of it. I can't wait! ✌

I made these tonight and OMG I couldn’t believe it. They were simply amazing. I am determined to get off my blood pressure pills so you’re now a part of my journey. I ate 3 before adding to sauce. I make them all the time but I put a cube of cheese in the middle. I call them eggplant parm balls. So yummy. I'm the family hero on that day.

Thanks for this idea! Just made this myself and cut some mozzarella sticks into chunks to put in the middle of each. Was delicious! Also, as a little tip for anyone else here who wants to use less ingredients or who happens to be watching calories or something, AFTER slicing but BEFORE dicing the eggplant, sprinkle some salt on it. Let it sit salted for 15-30 minutes, then rinse & squeeze the eggplant before dicing and cooking.(might want to half the salt amount added when cooking)...this way a lot of the eggplant moisture will seep out, making you have to use way less breadcrumbs. I had the same exact size eggplant but only had to use 1 and 1/3rd cup of breadcrumbs using this method, instead of 2 cups.

I use same ingredients as you, we must be the same nationality. My mom taught me to cook down the peeled eggplant, we drop spoonfuls of mixture into hot oil and make patties. I enjoy your videos.

My mother used to make eggplant balls and since I didn't like eggplant for most of my life, I never learned the recipe. I have since come to LOVE eggplant and my mom has passed, so I never learned the recipe. Thank you beautiful Diana for giving me back this piece of my childhood. You're the best. LOVE YOU!!!!

I made these and absolutely loved them. I am vegan so I used flax eggs but they turned out perfect. This is an amazing recipe and it will forever be my go to for meatballs. We made these today and they were soooo good! We put them on toasted french rolls with mozzarella cheese and it was so good. We also made your marinara sauce and it was perfect!

Two of us work for a chef who creates simple and healthy meals. This is one of the things he features. We portion out the food into containers, 300-400 meals, then deliver them later that day. The eggplant meatless meatballs are my favorite! I think this is the recipe he uses. He won't share it but I've been tracking it down and my search led me here. I'll make them and see if they're the same. He does use loads of fresh parsley and garlic. (He's Italian so these have to be the same!) ;-)

I really loved that recipe! There are times where I just want to have meatballs but no meat! Excellent choice of video!
