Lately, I've discovered that Italy is very open to veganism. They have so many plant based options to eat in restaurant or even in grocery stores you can find a lot of vegan products. This recipe looks briliant, will definitelly try it out! 😊

Well actually Italy is not that open minded about veganism as a way of eating and living; in Milan is certainly easier to find Vegan products but I'm smaller cities is not so much, and this kind of food is expensive. Every time I say to someone I am vegan there it begins the "sfottimento" (making fun of me) for no reason,just because I said I don't eat meat Here there are so many people that won't even try to understand why you do that, they are used to the culture here that takes meat as a unreplaceable food and they'll just spit their opinions without even bothering to let you talk. This happens as soon as you say that you're vegan,no matter that you had never bothered them with "veganism speeches", there is just so much prejudice

You're absolutely right, I agree. But I'm talking about the palnt based variants of specific foods. Italians have a huge range of them :)

Just made and demolished - Oh my it was sooooooooo goooooooood. My husband and I have been vegan for just over 3 weeks and have 3 sons who have no choice but to share in the meals we cook. We used a shop bought spicy tomato sauce and also some nutritional yeast (as we didn't have much of the violife cheese left). It got a massive thumbs up from everyone. Thank you for your inspiration.

I made a modified version of this and it was AMAZING. The entire large lasagna tray was eaten in almost 1 night. I didn't have any basil so I did layers of spinach and used some dried basil/Italian seasoning on each layer. I used cheese only the top layer. oh, and I just realized I didn't grill the eggplant. still so good 😋

so last night I dreamed that I cooked this dish but I forgot to grill the eggplant first so I totally screwed up the whole dish as I tried to undo the layering. you may call this a total nightmare :D as I woke up I thought I should give it a try and hoped that I won't mess up completely. and I made it, and believe it or not I managed to cook the entire dish without messing it up and I can proudly say that it was literally the best thing I've ever tasted. thanks for this super delicious recipe! :*

I just made it! Delizioso! I made your plain mozzarella and added some nutritional yeast and it was so creamy and stretchy! Any tips on how to make it hold together better? Mine was a little sloppy. Thank you Vegan Corner

+kaz coll Thanks for letting us know that you enjoyed it :) How much the parmesan holds depends from its temperature and moisture level. If it was too 'sloppy' for you, you can either cook it for longer, cool it down for longer, use a tomato sauce that it is thicker (rather than thinner,) or make a thicker mozzarella cheese. I hope this helps
