I don't eat pancakes without bacon or sausages. Some was undercooked, but they still look good. I love Emerald and been watching his shows since '95.

I keep powdered buttermilk in the fridge. This way, I don't have to buy a carton for only a cup and the rest goes bad.

I think that there is no need to judge Emeril. I think that because we all have different opinions about food. Emeril likes it a pancake that is not fully done. You may like a pancake that is fully done. I like fully done pancakes too. If you don’t like undercooked pancakes, simply cook the pancakes a little longer. A few tweaks are always necessary when making food. Emeril does not need to be judged.

I rarely see pancakes 🥞 that dark but they’re still good and I usually mix my blueberries in with the batter so they’ll be within the pancakes.😀

Curious as to your whisking to get all the lumps out. This is normally a cardinal sin when making pancakes, because it makes the pancakes tough. Unless you're using very low protein flour.

Whisking too much makes gluten - this is why pancakes get chewy. But note his pancake batter is rather thin.

Either the griddle is too hot or the batter a tad too thick or both. It's a mistake I've made before, especially when in a hurry and neglected to adjust the heat properly and/or the amount of liquid in the batter before ladling. I like Emeril so I'll let this one go as a bad experience that happens to all of us. Try blueberry or mixed berry syrup on these....soooo good.

Thin your batter and use a low to high pour. If done right the pancakes will have a round shape and have what is called a string of pearls on the obverse and concentric rings on the presentation side.

Ok, I don’t think this is quite his specialty. The griddle temp was spot on (medium low-keeps them golden, not brown or dark brown, while the batter cooks), but he must have hit the knob or something, because the pancakes were burning on the outside and still raw in the middle. I love that he kept says “Light & Fluffy!” “Light & Fluffy!”

American pancakes are a delicious alternative, especially because they're so much more fluffy. His finishing gobs of butter are a bit of a turn off though. Butter = fat = flavour; however, too much butter = squirty bum.

Really sloppy work. Barely no measurements and he overbeats the batter causing more gluten to form. Also, I hate when people simply put a hard square of butter on just one or two pancakes. The idea is to spread soft butter over all the pancakes so it seeps into the pancake, not just sits on top of one unmelted.

He beat the mixture too much. Overdevelops the gluten. Just whisk it together, don't beat it. Don't worry about lumps. Also don't flip'em until the edges look dry. That way they won't be raw in the middle, like his looked!
