- Ingredients
1 chicken thigh with bone
1% salt
100cc olive oil
1/2 turnip
15g carrot
60g porato
1/2 bunch shimeji mushroom
1 rape blossom
Sauce
300cc Madeira wine
400cc fond de veau
20g shallots
15g corn starch dissolved in water
Salt and pepper to taste
