This time, Chef Hatagawa from Chugokusai feve., a Chinese restaurant in Osaka, showed us how to make their spicy Chinese beef noodles.
Ingredients (for 4 servings)
500g beef sinew
60g bean sprouts
1/2 leek
40g komatsuna (Japanese mustard spinach)
4 tbsp celery, chopped
4 tbsp scallions, chopped
4 servings of Chinese noodles
Powdered Sichuan pepper, as needed
Coriander, as needed
[Huoguo jiang, the base seasoning]
100g onions, chopped
1/2 tbsp garlic, chopped
1/2 tbsp ginger, chopped
400g huoguo diliao, the base paste from store
350g xiangla jiang
60g douchi jiang
100g shaoxingjiu (Chinese rice wine
40g sugar
100g soy sauce
1/2 tbsp powdered Sichuan pepper
1 tbsp 13 spice powder
[For finishing]
20 dried chili peppers
6 tbsp huoguo jiang, the base seasoning
8 bay leaves
1.2L chicken soup
1 tsp sugar
1 tbsp Chinese rich soy sauce
Salt, as needed
Sesame oil, as needed
Sichuan pepper oil, as needed
Red chili oil, as needed
