[English SUB] Fast LaBa Garlic Recipe | How to Cook Chinese LaBa Garlic Pickle - Simple Chinese Food

Hello everyone, Today I show how to cook LaBa garlic pickled easily and quickly. Laba Garlic Green Pickled tastes sour and slightly spicy. This recipe is a modern way that the added sugar and salt balance the sourness.
▶ Ingredients :
● Garlic, 1.00kg
●●Salt, 1tbsp (for marinade)
● White Vinegar(5% Distilled Vinegar), 700ml
● Sugar, 200g
● Salt, 2tbsp
● Water, 700ml.
▶Method:
1. Peel the skin of the garlic, then cut the bottom ends and damage off
the garlic cloves if there are any.
2. Sprinkle the salt and strongly massage the garlic to reduce the unpleasant taste(bitter). Marinate the garlic for 20 to 30 minutes.
3. Rinse the garlic in the water 2 or 3 times to ensure it's clean.
4. Put the garlic in the glass jars.
5. In a large pot, pour the white vinegar, and add the sugar, salt, and water. Stir until the sugar is melted.
6. Bring it to a boil, for 8 to 10 minutes. Pour the boiling water into the jars.
7. Store the pickled Laba garlic in the low-temperature room.
8. The garlic turns to green after one day. The longer, the greener. DONE!

Vinegar in itself is already a preservative. Since the pickling juice was boiled, this makes it last longer as a preservative. After it has turned green in a day or 2 you can store the pickled garlic in the refrigerator to make longer shelf life..

1kg is a lot of garlic for one person to consume if none of the other members of the family like to eat it. I don't think it will last for a long time without preservatives. Better use about 250gr and remake when it's over.

Thank you for comment. Once the water is boiling, then pour over the garlic, seal and keep in a temperature place.After turn to green. you can store it in the refrigerator. There are two conditions to pickle Laba garlic doesn't turn green. One is to use low-temperature stored garlic. Another condition is to have White Vinegar(5% Distilled Vinegar), in enough acid conditions will turn the garlic to green.

Here's the trick to make it green. Garlic contains allicin and sulfide​. Allicin is activated by low temperature while sulfide need higher temperature. Once both are activated, the garlic will turn green. Put the jar in a warm oven or under the sun for 3 or 4 hours. Later at night, put the jar in the refrigerator overnight. This change in temperature will activate both allicin and sulfide and the garlic will turn green quickly. Hope this helps. Repeat if necessary

To make the garlic turn green, there need to be a change in temperature. Garlic contains allicin and sulfides. Low temperature activates allicin while higher temperature activates sulfides. When both are activated, they react to turn garlic green. First, put the pickle jar in a warm oven or under the hot sun for a few hours. Next, put in the refrigerator to cool it overnight. Repeat the process if necessary. The garlic will turn green.

Thank you for your comment. you can make pickled laba garlic without sugar. There are two conditions to pickle Laba garlic doesn't turn green. One is to use low-temperature stored garlic. Another condition is to have White Vinegar(5% Distilled Vinegar), in enough acid conditions will turn the garlic to green. keep it in the refrigerator.

Thank you for watching and your try my recipe and you can follow my method step by step: 1. Peel the skin of the garlic, then cut the bottom ends and damage off the garlic cloves if there are any. 2. Sprinkle the salt and strongly massage the garlic to reduce the unpleasant taste(bitter). Marinate the garlic for 20 to 30 minutes. 3. Rinse the garlic in the water 2 or 3 times to ensure it's clean. 4. Put the garlic in the glass jars. 5. In a large pot, pour the white vinegar, add the sugar and salt, and water. Stir until the sugar is melted. 6. Bring it to a boil, for 8 to 10 minutes. Pour the boiling water into the jars. Keep in temperature room. 7. The garlic turn to green after one day. The longer, the greener. DONE!

Here's the trick to make it green. Garlic contains allicin and sulfide​. Allicin is activated by low temperature while sulfide need higher temperature. Once both are activated, the garlic will turn green. Put the jar in a warm oven or under the sun for 3 or 4 hours. Later at night, put the jar in the refrigerator overnight. This change in temperature will activate both allicin and sulfide and the garlic will turn green quickly. Hope this helps.

Thank you for watching and trying my recipe. You can try to do my method as below: 1. Peel the skin of the garlic, then cut the bottom ends and damage off the garlic cloves if there are any. 2. Sprinkle the salt and strongly massage the garlic to reduce the unpleasant taste(bitter). Marinate the garlic for 20 to 30 minutes. 3. Rinse the garlic in the water 2 or 3 times to ensure it's clean. 4. Put the garlic in the glass jars. 5. In a large pot, pour the white vinegar, add the sugar and salt, and water. Stir until the sugar is melted. 6. Bring it to a boil, for 8 to 10 minutes. Pour the boiling water into the jars. Keep it in temperature room. 7. The garlic turn to green after one day. The longer, the greener. DONE!

Laba Garlic Green Pickled still have crunch after pour the boiling water over the garlic and they will turn to green after one day. Store in refrigerator for up to 4 months. Noted : 1. Sprinkle the salt and strongly massage the garlic to reduce the unpleasant taste. 2. Once the water is boiling, about 8 to 10 minutes and then pour over the garlic into the jars. 1kg is not enough garlic! We need more! 😠 On serious note, is it better to use 1:1:1 or your recipe of 1:3:3? I've tried using 90% vinegar + 10% sugar and it is very strong.

Try to use rice vinegar and use warm but not boiling hot water instead. Make sure to use glass jar because plastic or metal jar can cause unwanted chemical reaction. And put the jar(s) on sunlight for several hours a day and put it back later in the fridge at night. Because it needs the changes of temperature in order to turn green. Within 2 days it should turn green. Hope this method work.

Here's the trick to make it green. Garlic contains allicin and sulfide​. Allicin is activated by low temperature while sulfide need higher temperature. Once both are activated, the garlic will turn green. Put the jar in a warm oven or under the sun for 3 or 4 hours. Later at night, put the jar in the refrigerator overnight. This change in temperature will activate both allicin and sulfide and the garlic will turn green quickly. Hope this helps.
