What a good looking episode this was. Treat for the eyes, literally. You know what, Beth, I follow a host of cooking channels here on YT, but for some reason, I keep coming back here and at the kin community playlists, for seconds and thirds and.... actually I have lost count, frankly speaking. 😀 Today, you just turned a simple Brekkie/brunch item on its head, into a stunning gourmet spread with the side salad and the cute cornichons. I'm not much of a new subscriber because I discovered this channel (actually kin community and this channel through that) last December while looking for holiday recipes. Since then I've tried a few more recipes and it's now come to the point where I have to cook every time we eat spaghetti, because "I know the best meatball recipe." Thank you so much Beth! Yes. I cook my eggs the same. My Grandma was Creole and owned a restaurant in the 30's and could have been a World Class Chef. She could put love in ANY dish. I love your channel and I am glad to subscribe! 💖💯

Dany Sevestre You are right. This is very to the point and simplistic in nature. The other versions on YT are so heavily ladled with the "Bech" and cheese, that it can make you cringe. Beth on the other hand, keeps it clean.

I love Croque-Monsieurs! Funny, when we were learning all our food vocabulary in French class, Croque-Monsieur was one of the vocab words we had to learn! So that's how I know about the Croque-Monsieur! I wouldn't be a big fan of the Croque-Madame, since I'm "egg-intolerant" lol! Hope you're having a good week Beth! ❤️

I love that you suggested ground white pepper. I've recently been using it in place of fresh ground black pepper in all of my cooking to see how it goes. I'm leaning towards using it more and more.

I add 1 extra tbsp of butter after the bechamel has thickened just to give it a bit extra creaminess. On holidays even use 1/4 cup heavy cream & 1/2 cup whole milk. Love your channel.

Made the Monsieur Croque version using leftover turkey salad and the family loved it. Nobody complained about eating left over turkey again.... actually it was using already turkey left overs.

Seeing the amount of béchamel sauce in the pan and the quantity used, there must be quite a bit left. I can use mayonnaise instead? (PS. Thanks for still having your recipe in your description area)

oh sure you could use mayo too, or reserve the leftover sauce for the freezer, re-heat and then add a glove of garlic and some frozen peas, toss with pasta and you'll have another meal out of it :)

I always made the eggs exactly like your husband. I,ve never let anyone made mine.just me- very cook on the outside, and almost raw the yellow.

What cheese would you recommnad in place of gruyere? It's not only hard to find gruyere here in Korea but also very expensive! The most common cheese are chedder, mozzarella, and parmasan powder :)

Great episode indeed. But, your husband is right re the eggs. Great take on the bread, not in keeping with the original - I'll try it as I love stone baked sough dough bread, Without so much toasting though because the original bread is never toasted. As for the béchamel sauce, no pepper only nutmeg. Not sure why you put in both black and white pepper - very strange. I'd rather a bit of white pepper with the nutmeg.

Mais oui :) When my husband and I got married we agreed that our kids would be bilingual. So he only speaks to them in French and I only speak to them in English (except of course when they are doing something naughty in public then I'll whip out a few choice french phrases ha!) None of my husband's family speaks ANY english. And so it's been really great for my French too! This year I received my French Citizenship and now we are all dual citizens (French-Americans) so yes that was a very long winded answer to say that both languages have equal importance at our house :)

I do that to my eggs because I don't like the white of the egg uncooked. i find it gross. I like we'll cooked but a nice soft yolk
