love the rolled cabbage and daikon - my fave way of cooking these 2 veggies. the tofu cakes look yummy too. Hi Shinichi, if u ever get the chance to try, i would recommend 2 types of Chinese style egg: egg cooked in chinese herbal soup & Hakka style stewed egg. both are hard boiled eggs slowly simmered for several hours until the entire egg absorbed the soup/stock, making the yolk the tastiest part of the egg.

Miso Oden is very Nagoya style. When I was a grade school student, we often had Kantouni for school lunch. It was Oden in broth. But many Japanese kids grew up eating Oden without sweet Miso. I think this practice came much later just like Miso Katsu.

Yummmmm!!!! How awesome would it be for you guys to do another Oden making video with your 6 favorite ingredients. Especially, the rolled cabbage. I tried making Oden for the first time, a month ago, and it was an epic failure. The dashi flavor was there, however, the daikon was not soft enough, and the hanpen melted down......literally. It disappeared.

Sausages like the one you ate go through a weird change when stewed like they are in oden. Usually happens when the sausage has a high fat content or the fat used is in larger chunks compared to the cut of meat used.

Could you do a video for those of us in USA for basics in our cupboards/pantry? I love traditional Japanese food (lived in Germany for over 2 years) but am now in a location where I'm needing to learn how to make it myself. I even have to mail-order my Japanese mayo! My personal favorites are all types of sushi, ongri, and undon noodles. This Oden sounds fascinating as well.
