I have to admit, I squeeze avocados. I do check color but it’s not always correct for me and if I remove the stem part to check I thought the avocados turn quicker? Avacodos are like bananas for me. They have like a two day window where they’re great and that’s it.

What a great dad and chef! He loves chicken tacos because his kids are crazy about them. And only playing in the kitchen when his kids are around because he makes it fun. That’s a great guy and a tasty recipe. I especially appreciated the tortillas instructions. Makes so much sense to do it that way.

My Mexican father has been in the US for 30 years and I’ve always thought he has spoken English very well and suppressed his accent compared to most other mexicans ive met, Saul speaks great English even with a strong accent 🙌🏽fierro 🔥🇲🇽

With laws you have to be careful with your wording. Making squashing avocados illegal would make guacamole illegal contraband as you have to squash avocados to make it. Squeezing avocados while still whole by hand should be illegal.

I dice up cooked whole rotisserie chicken and add 2 seasonings packets, one lime juice and diced tomatoes then I make pico with Ava, lime, tomato and then I griddle tortillas and crema and queso fresco for sure!!

Pinzas are an awesome tool that I think don't get enough credit. We have 5 pairs in our kitchen but when we go to friends, they never use them. I'm not sure they own any except for the grill. People, buy some tongs they are so versatile. Call them pinzas because it fun to say and much more descriptive than tongs.

It's there for "fresh"/"bright" flavor. You could try lime zest... Maybe mint. You might "cheat" through with green onions. But you're not going to lose a ton just for omitting that part.

Do the lime after you’ve seared the chicken. Lime while marinating precooks it with the acid giving an unpleasant texture. Also, you don’t need to roll the pepper, you are literally blending it up, that will release far more than a little roll lol
